Fruit Pizza I

I think this would have been better if we had eaten it all in one day. It became soggy very quickly. I did like the lemon glaze, but it was messy and made it soggier faster. I would definitely make this again, but most likely for a bunch of people, not as a snack for my husband and I.

Bacon Cheese Frittata

OMG! My hubby and I loved this! I did a couple things different.. I added a lot more bacon and cheese. I mixed everything in the bowl. Sprinkling the bacon on top was useless it sinks anyway. I added cheese to the mixture and I did it in a 10' oven safe frying pan. I cooked it for 12 minutes on the stove at medium heat and then broiled it in the oven for about 6. Before I put it in the oven I added a heck of a lot of cheese to the top and watched for it to not over brown while in the oven. It turned out perfect! It had a scrambled egg texture and was fabulous the next morning as well. My hubby LOVED it!

Beef Wellington

I used this recipe on pork tenderloin and it was fabulous! I didn't use the sauce, but my husband and I honestly didn't need it. This recipe was absolutely wonderful. Other than the sauce I followed the recipe in it's entirety. I was worried about how the patte would taste, but it was excellent. I would use a rack within a pan next time to keep the bottom from getting soggy, I just didn't have one at the time. Even with a soggy bottom though, this recipe was a hit! I can't wait to try it with beef.

Beer Braised Irish Stew and Colcannon

I though this was so-so. However we only made the stew and substituted instant mashed potatoes. I think I would try another recipe next time.

Eileen's Spicy Gingerbread Men

These are my most favorite gingerbread men ever! They have the perfect amount of spice to them. I have tried several other recipes on here over the years and these have become a Christmas tradition. My entire family begs for them over the holidays. I follow the recipe to a T!

Creamy Baked Cheesecake

I'm still waiting to take a full bite, but as I was putting it in the fridge I snagged it with my finger and the little piece i got tasted awesome! This is my very first attempt at making cheesecake and I'm so excited that it came out so pretty! I always ready everyone's reviews before I make something on here so I can get advice on how to make it easier or better. I did the NY style version Except I traded 1 tbsp vanilla for the lemon juice and I left it at 3 eggs. Someone said the texture was off with 4 eggs. I'm not a fan of lemon so I went with a lot of the reviews that suggested vanilla. I also read one that said be careful to not over beat your eggs so that your cake won't crack. I only did it till everything look mixed and stopped quickly when it did. Another thing I read to keep your cake from cracking was to keep in in the oven after the time is up, but turn the oven off and crack the door so that it would gradually cool. I left it there for about 45 minutes and then put it in the fridge. I did have a lot of condensation so I took it out after a while and dabbed it with a paper towel. So far no cracks and it looks fabulous for my first try at cheesecake.

Three Cheese Manicotti II

My husband and I LOVE this recipe! It was my first time ever trying to make any version of manicotti at home and it was wonderful!. I've made it twice now and I plan on keeping the recipe on my menu. It was very simple to make. To make filling the manicotti easier I suggest (as a previous reviewer did) that you fill a plastic baggy with the stuffing and cut off the corner to push the filling into the pasta. Much easier. Also, be gentle with the noodles because they tend to rip pretty easily. You should definitely try this !
