Banana Banana Bread

This was delicious. Most banana bread recipes aren't "banana-ee" enough. This one was. I added 1 tsp vanilla.

Italian Meatball Sandwich Casserole

My husband actually thought the bread wasn't soaked enough with sauce (I had omitted the water). I would add the water next time. Not sure if I am going to make it again, though I really liked it.

Saltimbocca alla Pollo

This was delicious! Listening to other reviews, I did not add any salt and I put provolone inside the rolls. I would make another recommendation, too. When the chicken is browned, I would remove it from the pan, use some of the wine to de-glaze, then add the cornstarch (I use flour) to make a roux to begin the sauce. Then add the rest of the wine and some chicken broth. Cook until the sauce starts to thin and return chicken to pan.

Butterfly Honey Pork Fillets

Awesome Eggplant Rollatine

I agree that the egg mixture was too thick, I added an extra egg. I would probably use the eggs as an egg wash and add all the other ingredients to the flour as the breading, but I won't be making this one again, I don't think this was really all that good.

Grilled Salmon with Habanero-Lime Butter

The butter got a little too spicy for my husband, I liked it, though. I am not sure if we would make it again, but probably without the butter. Too much habanero took away from the flavor of the fish. I used Wild Alaskan salmon which is higher in fat than the farm raised.

Apple Stuffed Chicken Breast

This was delicious! My whole family (including kids) loved it. I didn't do it exactly as stated, though. I removed the chicken from the pan after browning, deglazed with the wine, made a roux (I needed more butter) and then added Chicken Broth, before returning chicken to pan. Not sure if this changed the recipe, I may try it the original way next time.

Cheese Fondue

I have made this several times. Sometimes, it is perfect. Sometimes, the cheese does not melt properly and then it is not so good. Not sure what I am doing different, but results have been spotty.

Crispy Orange Beef

This really was just ok. My beef never got crispy and the cornstarch all came off in the oil, so I had to discard all of it and start new. I used regular oj and that part was fine, although I would use some red pepper to spice it up if I were to make it again (I didn't because I was serving to my kids and I didn't want it to be spicy.) but I won't be making this again. Too much work for not enough taste.
