Chicken Pot Pie II

This turned out amazing. I didn't have a pie crust so had to sub in Bisquick for the topping, and I used corn, carrots and potatoes instead of just frozen veggies, but that's just personal preference, and next time I make this I might not have carrots and potatoes so I'll use the mixed veggies and I'm sure it will be just as good as it was tonight. (Oh and if anyone is wondering, I used the 1 c. bisquick 1/2c. milk and 1 egg plus a little parsley for my topping...it was one the back of my giant box. Cooked at 400 for 30min)

Best Spanish Rice

I just made this almost exactly as written and it is amazing! It is almost as good as the rice a Hispanic family I know makes from scratch and not nearly as complex. My rice did get a little dried out and browned on the bottom but I used a non-stick pan and I stirred it as soon as the 20 minutes were up and it's just fine...it might have cooked a little quick because I might have had the heat up too high so that is my fault and not the recipes. I didn't use onion, because I didn't have any, so I used a bell pepper instead. I didn't use a chunky salsa I just used Wal-Mart salsa and added a little cumin, chili powder and onion powder to it because I can't make Spanish Rice without adding in some cumin.

St. Patrick's Chocolate & Mint Cheesecake Bars

I made this the other day and I thought it turned out ok but my cheesecake loving husband liked it. Mine also fell and I'm not sure why. When I pulled the cheesecake out of the oven it was nice and puffy but then after about 10 minutes it fell and it definitely wasn't as thick as when I poured it in places. I couldn't find candy flavoring anywhere and had to try to use extract and I didn't think it came out very minty after using 1 and 1/8th teaspoons of extract. Another more important note I found out in the middle of making this...Betty Crocker cake mixes don't always come in the 18.25 oz package the recipe called for mine was only 15 oz and the one cup also wasn't enough to cover the top of my cake at all I ended up using another box of cake mix that I had to make the top of the bars. Next time I make this I will cut the recipe back to make a smaller batch and probably cut the cake mix in half so I know I have enough to cover the top of the bars. Oh and I didn't see the dark chocolate and mint chips either but I did happen to find some Andes mint chips that are awesome and I also got a bag of chocolate chips so I could have both chocolate and mint chips and it worked out great. I really like the idea of these bars but to make them work for my family it needs a little tweaking.

Thank you for this recipe, it was better than I had thought it would be. I have never used green onions before and didn't know what a bunch of green onions was so I just eye-balled the amount and it tuned out great.

Orange Chicken

I made this for my family and everyone loved it. I made a few changes (like everyone does). I cut my chicken into bite-sized pieces and sprinkled them with some ginger and lemon pepper and baked them at 400 for about 15 or 20 minutes, turning them halfway through. I also added some ginger to the orange sauce. My husband didn't like all the ginger but everyone else did. Oh and my rice, I added some ginger, cinnimon, and onion powder to the rice as well. There looked like a lot of sauce when I was cooking it, but there isn't much left over!
