Corn Dog Muffins

Awesome! I'm eating them as I write this. Super fun and easy to make. I love corn dogs and this is the next best thing. I've made these twice and have found using cupcake liners is the best route, since mine stuck the first time. Very tasty! A keeper!

This is excellent! Made it exactly as stated and let it sit for several hours before serving---it was fantastic! I'm going to try it with Roquefort next time. A keeper!

Rice A Roni™ Salad

This was one of the first recipes I saved on this site in 2002, and I just now got around to making it. I'm telling you I wish I had made this a long time ago--it is excellent! I took the advice of the top reviewer and added diced red pepper, green onions, artichokes, water chestnuts, celery and cashews. I also added 1Tbs curry power and some of the artichoke juice to the mayo and it was great. My husband isnt a curry fan, but he loved this and even suggested adding a dash more next time. Very good! A keeper!

Red Skinned Potato Salad

This is very good. A nice twist on traditional potato salad. I used half the amount of bacon called for (about 6 slices), green onions and added 1 cup of shredded sharp cheddar cheese. And instead of 2 cups of mayo- I used 1 cup mayo, 1 cup sour cream and 2 tbs dijon mustard. I sprinkled garlic salt and fresh ground pepper in the mayo/sour cream dressing. Very tasty--my husband loved it!

Old Fashioned Onion Rings

These tasted great, but mine didnt look so hot. Next time, I am going make the slices thicker and not cook them as long. I used Vidalia onions and panko bread crumbs and they were very crunchy. I used the plastic bag/tupperware bowl method and it wasnt messy at all. Very good--although next time I will doctor up the flour mixture with seasonings and spices as other reviewers suggested. It needs it.

Yummy Taco Salad Dip

I've been making my Seven Layer Taco Dip this way for years and it is always a huge hit. I think it is less heavy than the versions with cream cheese. I serve it in a 9-10 inch round, glass quiche dish and the presentation is pretty. Yummy!!

Baby Back Ribs

I didnt marinade my ribs, but I followed the cooking technique and they were fantastic. I coated my ribs with a rub of brown sugar and a cajun spice mix I make, and cooked them for 2 and half hours at 300 degrees. Then I grilled them on the BBQ w/ sauce for about 15-20 minutes. Excellent! Fall-off-the-bone yummy. This is the only way I will cook ribs from now on.

Red, White and Blue Slaw Salad

This is fantastic! I had saved this recipe almost ten years ago, but just got around to making it last night. This is very much like a chopped salad at a high-end steakhouse (Ruth's Chris/Mortons). I used a bag of cole slaw mix, only 5 slices of bacon, added 3 green onions, grape tomatoes instead of cherry and Marie's Cole Slaw dressing. My husband loved it! I will make this more often since I see just how good this is. It is versatile too--great with ribs, steak, casual gatherings or elegant parties. A keeper!!

Double Tomato Bruschetta

This is excellent! I used fresh basil and I'm telling you--dont bother making this unless you use fresh basil. It totally makes the dish. Instead of chopping all the tomatoes, I used my food processor and 'pulsed' it all together. It makes it a coarse, relish-like consistency. Also let this sit for several hours after making it because it truly gets better with age. I kept dipping into it with crackers before dinner because it was so addicting. My husband loved it--a total keeper!

Roasted Garlic Lemon Broccoli

Excellent! So easy to make and tastes soooo good. It has a nutty flavor to it that is really addictive. I skipped the lemon juice (because I simply forgot about it) and used kosher salt instead of sea salt--it was yummy. I sprinkled a little parmesan on top before serving. Totally a keeper!

Vietnamese Fresh Spring Rolls

These are excellent! I add thinly sliced cucumber and shredded carrot to this. The fresh basil and cilantro really add so much flavor. I find that 2 medium sized shrimp work perfect for these. I serve them as a salad sometimes and we love them dipped in a Thai Peanut Sauce. Yum!

PHILADELPHIA Vanilla Mousse Cheesecake

Excellent! I made this for Easter dessert and my husband totally loved it. It is so easy to make and really elegant. I was pretty proud of myself, to be honest. The cheesecake was creamy and the mousse was light and fluffy. My husband thought a little fresh fruit would be a nice addition. A keeper!

Slow Cooker Ham

This turned out great for me. I used a 6.75 lb ham and had to carve it a bit in order to cram it in my crockpot. In addition to the brown sugar I threw a small can of crushed pineapple in with it, as well. I cooked it on low for 7.5 hours and I think it was too long. It was very tasty, but just a bit dry. Such an easy way to make ham and will do so more often thanks to this easy method. A keeper!

Stuffed Peppers for Two

Very good! I used a red and orange pepper and split them length-wise so they would lay flat. I added more onion, about 1/4 cup, minced garlic and italian seasoning to the meat. I also salt and peppered the peppers before stuffing them. Great recipe!

Asian Lettuce Wraps

Excellent! I used ground chicken instead of the pork, added chopped water chesnuts and they were very tasty. I also used Boston Bibb Lettuce. Super quick and so easy to whip together. My husband loves PF Chang's wraps and he loved these. Totally a keeper!
