Chicken Korma II

I thought this was a great recipe! I had never made Indian food before, but have had it plenty. This was relatively easy and had great results. I doubled the sauce and added carrots and potatoes. I also did a tbs of each spice instead of 2 tsp when doubling as other reviewers said it needed more flavor. Served over brown basmati rice with cilantro in it. I will definitely make this again!

Peanut Butter Vegetable Chicken Soup

I really wish I could give this a 3.5, because the recipe is almost there but not quite. As is, there is barely any seasoning and the soup is pretty bland. The peanut butter does add a lovely touch but it still needs more depth of flavor, in my opinion. After tasting this as written I went to my pantry and added some coriander, cumin and curry powder. That really brought the dish from good to great. I had read other reviewers which had used those additionally as well and agree it brought the soup where it needed to be. This is definitly a good base to play around with, it just seems the recipe isn't quite done.

Burrito Pie

This was a great recipe for a quick easy weeknight meal. My only changes were to add a packet of taco seasoning to the meat after it was drained as well as a drained and rinsed can of black beans. Me and my boyfriend both loved it and now have plenty of leftovers to bring for lunch this week! Easily 5 stars in our book!

Overnight Asparagus Mushroom Strata

This was the first time I have ever made a strata. I had searched all over the site and liked the idea of the english muffin instead of the traditional cubed day old bread. I followed the recipe exactly with exception of subbing out the asparagus for ground turkey sausage (see grandpa's coriander turkey sausage on the site- you will not be disappointed.) It was so delicious and a perfect make ahead meal when you don't want to take the time to prep in the AM but want a nice meal. You can easily change this to suit your tastes and the english muffin was a great choice. Definitely making tghis again when we have company!

Grampa's Coriander Turkey Sausage

Usually I change recipes to suit my own tastes, but this one I left as is and the outcome was phenomenal! This tastes just like normal sausage, my boyfriend couldn't even tell I had used turkey. I used this in stuffed mushrooms as well as in a strata and it was perfect. I am going to make my own sausage all the time now! And the added bonus is I don't have to feel guilty eating it!

Ten Minute Enchilada Sauce

Ten minutes and ten times as delicious as any sauce from a can. This was so easy and quick! I threw a Mexican cuisine dinner party and knew when I saw this recipe, Enchiladas would be my main course. I doubled the batch and poured a little on the bottom of my pan covered the bottom with corn tortillas rolled and filled with shredded chicken, mexican cheese, cumin and chile powder. Topped with the rest of the sauce and more cheese. Baked at 350 for 20 minutes and it was perfect. The whole group devoured it. I thank the sauce, it really made all the difference!

Cilantro-Lime Dressing

Wow, this was soo delicious and easy! I couldn't find my balsamic and forgot the ginger (oops!), but this was perfect regardless. I also put in a tad less honey and it was just simply amazing. Used my immersion blender and made in the cup that came with it, so clean up was a breeze! My boyfriend was asking for salad again the next day- definitely a good sign :)

Sweet Pork Slow Cooker Chili

Wow- loved this recipe even more than I was expecting! I used regular chili powder and paprika and forgot the brown sugar (oops!) but it was still phenomenal! I added 2 diced jalapenos since I like my chili spicy and it was the perfect balance of sweet and spicy. I served it with shredded cheddar and sour cream. I also mixed half the leftovers with brown rice and brought it for lunch during the week. Both veriations lended well to the chili. I will definitely make this again. It is a unique dish that will surprise you. I would definitely reccommend it for a pot luck as it is a definite crowd pleaser!

Latin-Inspired Spicy Cream Chicken Stew

I read through a lot of slow cooker stew type recipes on the site and landed on this one for a few reasons. The flavor sounded great and the recipe seemed quick to put together- boy was I right! I made only 2 changes to the recipe which was to use boneless chicken thighs instead of chicken breast and low fat cream cheese at the end. This recipe really was SO easy. If you can operate a can opener you are pretty much done. After 10 hours on low the chicken essentially shred itself. The key is definitely using good quality pantry items. I used a Salsa Verde that is my absolute favorite from Trader Joes and a higher quality can of diced tomatoes which I think helped with the depth of flavor. I will definitely be making this again!

Greek Dip

First of all, I brought this dip to a bachelorette party and it was a HUGE success. That being said I did make a few changes. I couldn't find sun-dried tomato pesto, so I just used regular. I also threw about 3-4 maritnated artichoke pieces into the food processor as well when blending. Beyond that I agreed with another reviewer that made as directed the dip comes out almost more like a cheese log consistency, which would hold up fine to cut veggies but was a little too thick for the pita and bagel chips I had. So I added about 1/4 c each lite sour cream and fat free creamer. This made it more dip like and absolutely addictive. I loved this and so did my company. I gave 4 stars since as is the recipe was too thick in my opinion but the flavor was spot on!

Stuffed Peppers with Turkey and Vegetables

I tried this recipe after reading many reviews and made my own adjustments accordingly. Me and my boyfriend love spicy food so I added some cumin and chili powder to the turkey during cooking. This added flavor and the amount of heat we like. I also added corn kernels and brown rice to the mixture because we had some on hand. I baked the peppers alone for 15 minutes as directed and then baked the stuffed peppers for 20 minutes before adding a little mozzarella and cheddar cheese to the tops and baking 5 more mins to melt. They came out perfect! They were not too soft but not too crunchy and the filling was amazing! We got large peppers and still had filling left, I am going to eat the left over filling for lunch tomorrow- it's that good! Definitely making this again!
