Roasted Squash Soup

This soup was awesome. I roasted a butternut and 2 types of acorn squash, sauteed onion with garlic, added a good heaping Tbsp of red thai curry paste and cooked that for a minute, poured in a can of coconut milk and added a medium sized yam to the pot. I forgot to bake it with the squash. Topped up with water to cover peeled and chopped squashes, added 2Tbsp chicken Better Than Bouillon paste, a splash of Kirsch as I didn't have any Sherry or wine in the house and some black pepper and a pinch of red pepper flakes. Added 2 chopped apples (Gala & Ambrosia)and cooked until they were soft. Puréed soup in batches. Served soup with banana slices in soup bowl and a dollop of reduced fat sour cream on top. Yummy! A bit of an Asian twist on this curry soup.

Jamie's Cranberry Spinach Salad

This was so good My husband loved it. I had to make substitution for white wine vinegar as I had none in the house so I used 2 Tbsp balsamic vinegar and 2 Tbsp white vinegar plus1 Tbsp of reduced sodium soya sauce. I cut back on the sugar, only 1/3 c and it was still a bit too sweet for my liking so I would cut back to 1/4 c next time or try some Mirin as it is readily mixable with the other wet ingredients. Thanks for sharing this recipe.

Asian Fish With Vegetables

My husband and I really enjoyed this meal. I used salmon filet as that is what I had on hand and baked in the oven. I did turn the fish over and finished cooking under the broiler. I did add 1tbsp each of fish sauce and reduced sodium soy sauce. Even though my hubby is not a fan of cilantro I was able to convince him it is good and it lends a bright green color to the dish. The kids weren't as impressed but the older one ate his plate clean. I liked the crunchiness of the cabbage too.

Lime Chicken Soft Tacos

This was a real hit with most members of the family. I didn't have red wine vinegar so I substituted 1Tbsp balsamic vinegar and 1 Tbsp Seasoned rice vinegar, added juice of whole lime after zesting the rind and added that too. Nice lime taste! Instead of sugar I substituted same amount with Mirin. I used cumin instead of oregano, corn tortillas instead of flour tortillas and added chopped fresh cilantro. Very tasty and quick to prepare. I only had 2 chicken breasts which would make 4 feed only 4 people.

Crustless Pumpkin Pie

This was a great way to get the pumpkin pie taste without the crust. Even my vegetable resistant child ate the hidden baked, pureed yams. I reduced the sugar by half but then added 2 Tbsp golden sugar for the flavor. Added 1 tsp cinnamon, 1/4 tsp each of ginger, cloves, and nutmeg. Served with whipped cream. Delicious! Easy to prepare. Thanks for the recipe, it's a keeper.

Tropical Coconut Black Bean Soup

After reading the reviews, I fried up some chopped sweet onion, minced garlic, chopped carrot in coconut oil, added cumin, cajun seasoning, pinch of pepper flakes; instead of water I used the water that the dry beans had been cooked in and added chicken bouillon paste (Better Than Bouillon), added juice of one lime and pureed only 1/2 the batch. Served with sprinkle of dried cilantro leaves but would use fresh if on hand. Delicious!
