Pumpkin Spice Cupcakes

Just what I was looking for! These were so yummy! A tad on the dry side, will add some oil or applesauce next time. The frosting... out of this world! I have made so many different cream cheese frosting recipes but I have never had one that asked for butter. I think this may be the key to their super deliciousness!

French Beef Stew

A very good hearty meal. So easy to make. Mine was done in an hour with the baby carrots I used and potatoes so nice and tender. I added some cornstarch and water to thicken for our liking.

Roast Pork with Maple and Mustard Glaze

So tasty! I also basted this every 20 minutes and served the extra juice from the bottom of the pan at the table. My guests spooned it over their potatoes and used their bread to soak all the extra juices! Mmmmm!

Chicken Pasta Salad with Cashews and Dried Cranberries

I liked this salad but would definitely do differently next time. I prepared this one late night. Had put the cooked chicken, cooked pasta, grapes, and green onions in a bowl with every intention to make that night. However, I ended up going to bed early. The next night, I mixed the cole slaw & mayo ( I omitted miracle whip-instead added extra 1/4 cup mayo and 1/2 tbsp of lawry's seasoning) and added the mayo mixture to the cold pasta then added cranberries & pecans. It looked so yummy I decided to eat some then and it was delicious! However, I made this for the next day and as the recipe suggest, I let it marinate overnight, the next day it was a let down! The flavors just "fell flat". I would suggest prepping the salad, chilling overnight, then adding the dressing! Also, make sure you add the cranberries right before serving as they will turn your salad a grayish color.

Beer Butt Chicken

Finally decided to try this! Glad I did! I melted the butter in the microwave and used 2 Tbsp Montreal Seasoning Roasted Garlic Chicken Seasoning, 3 Tbsp Lawry's Seasoned Salt and 1 tsp cayenne pepper. I also baked mine in the oven for 1 1/2 hr at 350, placing it in a shallow broiler pan minus the broiler rack. I had no problem with it standing and did not use a special store-bought stand. I came out perfect and flavorful. The one down-side, I wish it had more skin because that was the bomb!

Oatmeal Raisin Cookies I

Ok, here it is! The cookies themselves tasted good, however, the cookies were a disaster. As a reviewer mentioned, they came out like a flat crumbly disk. I thought I had overmixed the butter. So, for the second batch, I placed the batter in the fridge for 1 hr. No change! They reminded me of Queen Anne's Lace Cookies not oatmeal cookies. A reviewer before me stated it was not the fault of the recipe, however, she had to make adjusts. So, I am sure if followed the recipe as written as I did, she would have had the same experience! I am a very experienced cook, baker & culinary graduate. I don't mind adjusting recipes to my taste but I don't like fixing a broken recipe!

World's Best Lasagna

Good recipe! Always make lasagna when having friends over for dinner on a weekday. I have always used no-boil lasagna noodles so I was a little nervous about this! I followed many reviewers who suggested prepared it the day before. I guess the hot sauce will partially cook the noodles. Hubby thought this was delicious (5 stars). My 5 guests did not rave, they raved about the store bought bread and salad but hey, I think hubby is more a conoisseur of food than they were!

Easy Mexican Casserole

We absolutely loved this! I also used taco seasoning, which I made from this website, Taco Seasoning I. I had no problems with soggy chips but I also used Pace thick and chunky salsa that didn't have a lot of juice. The salsa and beef mixture did not even have to simmer to long! In fact, the chips were crispy!

Tail Burner Firehouse French Fries

The flavors did not blend well! The lemon pepper was too much and I used only 1 1/2 tbsp! I also used only 1 tsp crushed red pepper, 2 tbsp butter and was still not impressed! To modify a recipe as much as I did, is not worth keeping!

Mrs. Sigg's Snickerdoodles

These are so delicious! I have been making snickerdoodles for years and this is, by far, hands down, the best recipe I have come across! For Christmas, I jazz these up with red and green sugar crystals-Betty Crocker brand. Just recently, for our son's adoption party, I used the larger baby blue sugar crystals you buy at speciality store and placed three in a cellophane bag with a ribbon and mini-rattle for favors.

Liked how easy and delicious this dish is! Used crushed garlic and onl 1/2 tsp of pepper flakes...still zippy enough! Wish I had fresh basil, I think it would have even been better!

Baked Pesto Chicken

So easy! Hubby really loved this. I liked a lot but found the pesto flavor very overwhelming. I love pesto but I guess in smaller amounts. I will make with provolone cheese next time!

Banana Split Cake II

WOW! Sooo yummy! We used 2 9-inches disposable pie plates instead of one cake pan and froze the second cake. I hope it unfreezes okay! I will definitely make again, maybe top with peanuts next time!

Shiitake Angel Hair Pasta

I could not wait to try this recipe and was slightly discouraged when my supermarket did not carry shitakes! I substituted portabellas other than that followed recipe exactly. Can't wait to try shitakes for a more woodsy and earthy taste! Ate with AR's Flat-iron Steak with Balsamic Reduction

This was outstanding! I experienced no complaints with a too vinegary tasting reduction. If cooked properly, this should be exactly as desribed in KMOMMYZ's description, "a sweet & savory syrup". The key is to reduce it to a thick syrup consistency. I also used only 3/4 cup balsamic vinegar.

Something different! Hubby really liked. While making these I realized I was out of chicken broth so I did the unthinkable... I strained a can of condensed chicken noodle soup, ugh! I am ashamed to admit that! Oh well, it worked!
