Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

Yummy, light & fresh! I have been making a variation of this salad for years. I used walnuts, gorgonzola, and craisins and just threw together a nice balsamic vinaigrette. But, wow what a nice change! I omitted the red onions and used mandarin oranges just because I was too lazy to peel and section oranges : )

Scrumptious Salisbury Steak in Mushroom Gravy

Good dish! Needs a few adjustments. I would leave out the beef bouillon next time and subsitute beef broth. Also, I used fat-free milk and it was the perfect consistency.

Slow Cooker Adobo Chicken

So yummy! I followed another reviewer's advice and omittd the onions. I only had 1/2 of soy sauce and it was not too tangy. It was perfect! I would recommend using dark meat as the breast meat gets a little dry cooking this long.

I thought 2 Tbsp of sugar was a bit much! Way too sweet for our taste. I added 2 extra Tbsp of vinegar and 1 extra of oil.

Hudson's Baked Tilapia with Dill Sauce

How quick and easy! Let's not forget deilcious! I have had cajun and blackened fishes before but the sauce is the key here! I am trying to eat healthier so I subsituted low fat sour cream. I doubled the seasoning because it tasted too "mayonnaise-y", however, it didn't really need it!

Good basic dish but just lacking something. I was anticipating loads of flavor but was let down. I even added garlic! I feel it is more a 3 1/2 star more than a four. However, I would make again with major adjustments.

Peachy Mustard Pork Chops

What a delicious twist to traditional chops! I made a few changes (not on purpose). I used low-sugar apricot preserves instead. I had two bottles of apricot, could have sworn I bought peach preserves! Apricot was delicious and I imagine peach would taste even better! I planned on grilling but Mother Nature had other plans. I seasoned with salt and pepper and seared then basted with sauce. Maybe next time when I try the peach, I will add a little ground ginger and cayenne pepper for a kick.

Apple Spice Cake

I liked this cake but I, personally, like a bit more spice in my spice cake. I used red delicious apples...never again! Just lacked that apple flavor I was looking for. The recipes calls for 3 apples and a novice baker would grab any type of apple. I used the red delicious because that is what had and they needed to be used up. I also used a 9 x 13 inch pan for 40 mins.

Sweet, Sticky and Spicy Chicken

Very Yummy!! It is 5 stars once I made several modifications. I added sliced scallions and a bit more brown sugar & honey. I used ground ginger instead of fresh ginger. Next time, I will definitely use less soy sauce!

Peach Cobbler Dump Cake I

Ok, I thought this was a yummy dessert. Not exactly my cooking style. But time was of the essence and I was too lazy to even think abut some complicated dessert! I mean really, 3 ingredients!!!! How awesome is that! I never bake with cake mixes or canned fruit for that matter but this was so simple and yummy I would definitely make again.

Carrot Oatmeal Muffins

I had very high expectations for these muffins but they fell a little short. They were incredibly moist, I followed many other suggestions and used 3/4 cup applesauce and 1/4 cup oil. However, they were bland. I wanted to taste a sweet cream cheese filling and it just was not there!

Cocktail Wieners II

Definitely needs adjusting! I used 2 (16 ounce) package of smokies, 8 oz cocktail and 8 oz grape jelly, they were swimming! Once I drained some of liquid out, they were yummy! ***Also, remember to dump your sausages on a paper towel to drain all the excess juice from bag, BEFORE you add them to the jelly mixture. There is alot of excess liquid in those bags!

Pumpkin Spice Cupcakes

Just what I was looking for! These were so yummy! A tad on the dry side, will add some oil or applesauce next time. The frosting... out of this world! I have made so many different cream cheese frosting recipes but I have never had one that asked for butter. I think this may be the key to their super deliciousness!

A very good hearty meal. So easy to make. Mine was done in an hour with the baby carrots I used and potatoes so nice and tender. I added some cornstarch and water to thicken for our liking.

Roast Pork with Maple and Mustard Glaze

So tasty! I also basted this every 20 minutes and served the extra juice from the bottom of the pan at the table. My guests spooned it over their potatoes and used their bread to soak all the extra juices! Mmmmm!
