Chicken Noodle Casserole II

Ugh! After 30 minutes my noddles where still not cooked. I ended up adding another can of soup. 10 minutes later, still undercooked! When I finished, it was good but not worth the aggreviation!

Sugar Cookie Icing

Doubled this recipe and definitely needed tweaking. Added quite a bit more milk and corn syrup than posted, impossible to work with that little amount of liquid! I realized well into the recipe I had no extracts of any kind! And since this was going to my son's daycare I opted aganist liquor! The flavor was a little off and I truly believe the extract would have delish!

I agree the dough was very sticky. I did follow one reviewer's advice and roll it between two sheets of wax paper. Put in oven for 7 minutes at 375, came out perfect.

Pumpkin Bread

A nice pumpkin bread! I used 1/2 c butter and 3/4 c applesauce which resulted in a light and moist bread. I only used 1 tsp of cloves and nutmeg. Even with 1 tsp, the clove and nutmeg taste was still a bit overwhelming. This easily could of been a 5 star except I was looking for a more pumpkin taste.

Spiced Raisin Mini Muffins

Simplicity at it's best! These tasty muffins were so simple and easy to make! Love that the ingredients were basic staples. Initally, I was nervous because the batter was a little more runny than I was used to, however, it came together perfectly. I also chose not to cook the ingredients prior to mixing.

Stuffed Beef and Black Bean Tamale Pie

Good dish. The crust was unimpressive to me and was a little dry. Would have prefered tortilla chips. Hubby really liked as did my 15 month old. I added some onion and garlic for some more flavor. Needs to be more saucey.

Coconut Macaroons III

OMG! I decided to make these after I realized I had 5 bags of flaked coconut stashed in the pantry! The recipe definitely makes more than 12. Maybe 12 tennis ball sized! I will follow the advice of several reviewers of chilling them for several hours then dipping in chocolate. Can't wait! Delish!

Sesame Shrimp Stir-Fry

This was just okay. Did not have the flavorfulness I was expecting! Just a word to the wise, sesame seeds do get old as I did find out. So make sure yours are fresh for the best flavor!

Balsamic Roasted Red Potatoes

I loved these potatoes! However, make sure you use small potatoes or cut into smaller chunks. I had used large red potatoes cut in quarters and it took almost an hour for them to become tender! I loved the taste of the green onions with the balsamic so I would definitely add more onions!

Seared Sea Scallops

I am not sure what to say. I just did not care for these at all. Two tablespoons of lemon pepper was too much. After two scallops, I wiped all the seasoning off. Even my husband who eats just about anything did not have much to say. Said they were "Good" and left it at that. Normally, he raves through out the whole meal.

Bada Bing Bada Banged Potatoes

I have no idea what I did wrong but I had planned on grilling these but after boiling them they fell apart. I guess I boiled them too long! I ended up having to rough mash them and cooking in the oven. Best mess up ever! Even semi-mashed, they were crispy, excellent twist on potatoes!

Delish! So easy to make! Used Dutch oven, subsituted salsa for chili sauce and used diced tomatoes with chili peppers for an extra kick! My 15 month old gobbled this up!

A Good Easy Garlic Chicken

This was just that... a good easy chicken. This tasted exactly what I been making for years as the old plain chicken dinner except mine isn't as greasy since I use 2 Tbsp EVOO. In my dish, I always just used seasoning salt, only. In this dish, I barely noticed the garlic or onion powders. So, I would call this A Good Easy Chicken no garlic!

Grilled Lemon Chicken

Great light way to make chicken. Hubby really enjoyed. I did not bother with any bowls just threw the chicken in a ziploc and added the ingredients! VOILA! Would not change a thing.
