Sarah's Applesauce

WOW! Loved it! Had 4 apples sitting around and having pork chops for dinner. And in 20 mins after my chops were finished, voila, homemade applesauce! So refreshing, light, and easy!

Slow Cooker Chicken Stroganoff

With a four hour off premise and three hour at home working, I have rediscovered slow cooking. I had high expectations but was a little let down. It was really lacking something. I used the suggestion of another member and used fat-free cream cheese and low fat cream of chicken soup. I also added mushrooms. I think next time, I will add some sauteed chopped onions.

Rich Chocolate Brownies

Super yummy brownies! I made a few alterations. I tripled it and added no baking powder as another reviewer had suggested. Then, I added a handful of chocolate chunks into the batter. For the frosting, I did not have instant coffee but I did have freshly made coffee which I subsituted. Also, finished I realized the recipe (tripled) called for 4 1/2 cups of powdered sugar, I only had 2! Two cups was sufficent! So, I would recommend possibly cutting the sugar by half. Save some calories so you can eat another brownie!

Frank's® Red Hot® Buffalo Chicken Dip

Absolutely delicious! I was a little at first because I am not a bleu cheese fan, however, I made this for a get-together and it did not matter if I liked blue cheese! I am glad I did! Although, I used the mozzarella, I did use the bleu cheese dressing and it added a nice zing to it. It is important to use a quality bleu cheese dressing not one like Kraft or a generic one. This was scarfed up by 7 people and gone in a blink of an eye. I followed the recipe to a "T"!

This is my drink of choice when going out. As a bartender in my 20's, this was your basic cocktail. In bars and restaurants, this is called a madras. From this recipe you build many great drink recipes by adding another liquor (peach schnapps, raspberry vodka, pineapple juice)

Roast Potatoes

Yummy! Of course, I added some spices to jazz it a bit. I bought some chipolte chili powder for a recipe and only used 1/4 tsp, so, of course, I wanted to use it up! I added 1/2 tsp of the chipolte powder, 1 tsp garlic powder, 1/2 tsp onion powder and wow, was it yummy!

Chicken Dijon

I made several adjustments following other member's advice. I pounded my chicken to 1/2" thick and seasoned with poultry seasoning. I added some kosher salt, fresh cracked black pepper, and seasoning salt. I did not put in the oven. Was very good and we liked the flavor.

Carol's Arroz Con Pollo

Made this for my cooking club where the theme was comfort food with a twist. The recipe on it own was a great, easy dish, however, I did make slight adjustments. I boiled my chicken in a dutch oven with adobo seasoning for an hour on low-medium then shredded the chicken. I placed the chicken on a paper plate then sauted the veggies, added the rice (which I used Vigo yellow rice), added two extra cloves of garlic and a tsp of cumin. When the rice had 5 minutes cooking time left I added the shredded chicken. After this, it was 5 stars!

Curried Honey Mustard Chicken

A good dish, however, didn't that punch I was expecting from the curry and cayenne pepper. I being the "pantry queen" was shocked to find, I was out of dijon so I used Boar's Head spicy deli mustard. Definitely, could have done without the butter, it added no extra flavor just extra fat. Hubby and I did like it, we will just make some minor adjustment next time.

Summer Potato Salad

I loved this potato salad. I followed the exact recipe and am so glad I did. I was a little leary about the lemon juice but this potato salad taste exactly like my favorite deli one I grew up on. I added paprika, just for garnish! Oh yeah... I did cheat and use ready-to-eat hard boiled eggs!

Tiramisu II

A wonderful tiramisu! I looked high and low for a 7x11 inch cake pan and used a 9x11. For the first layer of ladyfingers, I followed another members suggestion and drizzled the coffee mixture-don't do this, dunk them in the bowl! I subsituted Kahula for the Rum. The one problem I had was the whipping cream, I think I had to triple it, 1 1/4 cups heavy cream is not anywhere near the amount needed for two layers!

Caesar Salad Supreme

Absolutely loved it! Served this at an Italian Dinner Party for my cooking club, everyone raved. I did make a few adjustments. I minced the anchovies as written and ended up with teeny chunks of anchovy "blobs". I put in my mini-processor. It was also a little thicker than I liked so I added milk and red wine vinegar as another member suggested. So yummy!

Cornmeal-Crusted Catfish

I made this for seafood night with my cooking club. Very simple and fairly inexpensive. I used a bit more cajun seasoning and added 1/4 tsp cayenne pepper, still could have used some more.`A little more kick would have made it a 5 star!

Best Carrot Cake Ever

I followed this exactly with one exception, I soaked my raisins in rum overnight as one reviewer suggested. I used Cream Cheese Frosting II recipe from this site. The cake was very flavorful and we loved the texture with the pineapple and walnuts. The cake was very dense and heavy. Would have given it 5 stars if it were a bit lighter. I would, also, recommend using 9-inch cake pans, it would add a nice height!

Lemon Blueberry Drop Scones

Absolutely loved these! So light and refreshing and so moist! My grocery store did not have lemon yogurt so I subsituted plain yogurt and added 2 tsp pure lemon extract and 1 tsp lemon juice. I am not sure I would classify these as a scone. They were between a tea cake and a biscuit. But when you come up with a recipe this good, call it what you want!

Chicken Breasts with Lime Sauce

Six Tablespoons of butter! Wow! I reduced it to 4 Tbsp and it still a lot of butter. I should have read the other reviews and used chicken broth with 2 Tbsp of butter.

Rice with Herbes de Provence

Hot Mexican Spinach Dip

This dip was a big hit! I attended a meetup with over 100 people and we were all to bring "snacks or appetizers". Only few knew who made this. All evening, I kept overhearing how good everyone thought it was! I did make some changes. I omitted the olives and milk. I added a can of Ro-tel Tomatoes with chilis, 1 Tbsp of tabasco, and another 2 cups of cheese. I did use Mexican cheese. I will definitely make again and next time I will use Pepper Jack!

Glazed Lemon Bundt Cake

A nice refreshing cake. However, I would have like a more powerful lemony tasting cake and I even added an extra 1 Tbsp lemon juice. The cake itself was a little dry almost a coffee cake consistency (you know, the cake best for eating and dunking in your coffee). With the glaze, make sure you poke holes all through-out the cake and use powdered sugar instead of granulated sugar. Also, I used 1 cup of powdered sugar to thicken it up a bit! Overall, it is a good cake just several problem to tweak.
