Beer-Boiled Shrimp

Excellent... easy... melt in your mouth shrimp. Don't overcook. Let them JUST turn pink and then turn it off and let them sit. They will be perfectly cooked after sitting for 30 minutes. Boyfriend said these were the BEST boiled shrimp he'd ever had.

Restaurant-Style Zuppa Toscana

I enjoyed this recipe... And, I chose to make a PALEO version. No need to reduce fat for paleo... ;) I cooked the bacon first, and then cooked the onion in the rendered fat. Instead of cream, I used coconut milk, and instead of potatoes, I used sweet potatoes! I also doubled the Kale... packed 4 cups! Touch of red pepper flakes, and some Trocomare ... YUM!!!!

Curried Coconut Chicken with Cauliflower and Currants

This is so full of flavor! I use 2 TB of yellow curry and 1 TB of red curry. I also add a head of fresh cauliflower, or a bag of frozen. I also usually add some arrow root to thicken towards the end.

African Chicken Stew

I give it 4 out of 5, only because it is an acquired taste; Not everyone likes the peanut butter flavor. I used boneless chicken breast instead of whole chicken. I used chicken stock instead of water, and I cut the peanut butter down to 1/2 cup. I add a couple of carrots and 2 stalks of celery as well as a can of diced tomatoes (add tomatoes last so the beans get to soften a bit).

Grandmother's Buttermilk Cornbread

Quite frankly the best cornbread EVER! Supermoist and a perfect companion to Blackeyed Peas, or Chili. I followed instructions and melted butter in skillet, mixed dry ingredients together seperate from the eggs and buttermilk then added all ingredients to skillet and then poured into greased pan. Two changes, I substituted 2/3 cup of instant vanilla pudding for the sugar, and added a dollop more buttermilk. Used Wondra flour, which is our preference. Perfectly sweet, moist and delicious! Absolute keeper.

Quinoa and Black Bean Chili

Unreal! This dish is simply divine. I have never rated a recipe until now, and this one deserves the rave reviews that it gets. I made it almost to spec, omitted the chipotle and added yellow bell pepper instead of green for more color. This one goes into my all time favorite vegetarian dishes. Flavorful, filling, colorful, whole food goodness! Thanks Shauna for submitting this recipe!
