About this Cook
I saw the movie Ratatouille and came out of the movie with the attitude, ANYONE CAN COOK! And so it began, I went to a used book store and bought 1/2 a dozen books and started cooking that day. Since I was single at the time, I started throwing dinner parties and inviting my friends to get feedback on my dishes. Rave review led me to start tweaking recipes, and the reviews got even better. I LOVE to cook!
My favorite things to cook
I am loving stretching myself to learn how to cook and adapt recipes for the paleo, and Whole 30 lifestyles. No dairy, no gluten, no sugar. Right now I LOVE LOVE LOVE curry.
My favorite family cooking traditions
My mom was a baker. So, I learned early on to LOVE sweets. I am stretching here, and learning to cook with almond and coconut flour, and still make taste sweets, and awesome desserts.
My cooking triumphs
When my sweetheart starts moaning at the table. I know I have triumphed!

Beer-Boiled Shrimp
Excellent... easy... melt in your mouth shrimp. Don't overcook. Let them JUST turn pink and then turn it off and let them sit. They will be perfectly cooked after sitting for 30 minutes. Boyfriend said these were the BEST boiled shrimp he'd ever had.

Restaurant-Style Zuppa Toscana
I enjoyed this recipe... And, I chose to make a PALEO version. No need to reduce fat for paleo... ;) I cooked the bacon first, and then cooked the onion in the rendered fat. Instead of cream, I used coconut milk, and instead of potatoes, I used sweet potatoes! I also doubled the Kale... packed 4 cups! Touch of red pepper flakes, and some Trocomare ... YUM!!!!

African Chicken Stew
I give it 4 out of 5, only because it is an acquired taste; Not everyone likes the peanut butter flavor. I used boneless chicken breast instead of whole chicken. I used chicken stock instead of water, and I cut the peanut butter down to 1/2 cup. I add a couple of carrots and 2 stalks of celery as well as a can of diced tomatoes (add tomatoes last so the beans get to soften a bit).
