I liked this a lot. I made it exactly as written except I used olive oil instead of margarine and skipped the cilantro. I'll definitely make this again.

These were good, but not anything to rave about. The texture is like cake, but they aren't as sweet as cake. Actually, if I make them again, I will probably add a little more sugar (surprising for me because I usually have to reduce the amount of sugar in recipes for my tastes).

Lemon Cake

This was so good and so easy! I made it for my husband's birthday and did a layer cake with 2 9-inch rounds. I made it exactly as written except I used lemon cake mix and used 2 whole eggs instead of 3 egg whites. It cooked in about 24 min. I didn't notice any aftertaste at all in the frosting, surprisingly, because usually I detest "sugarfree" stuff.

Cowboy Oatmeal Cookies

These are good, but a bit too sweet for my taste buds. To be honest, I think the butterscotch chips contributed to this. I halved the recipe and subbed coconut oil for the oil & margarine, but otherwise made it as written. Next time, I'll use about a third less sugar if I use the butterscotch or any other sweet addition.

Buttermilk Pancakes II

These were really fluffy and good. I cut the recipe by 1/3 and ended up with 6 medium to large size pancakes. I also used self-rising flour, so I omitted the addition of baking powder, baking soda and salt. I let the batter sit for 10 minutes before cooking. Good stuff and so easy, I don't even know why I've been a box mix user for so long.

Chocolate Oat Snack Cake

I probably made way too many changes to call this a review for the original recipe, but it was superb, nonetheless! So, my changes were based on what I had in my kitchen. First, I halved the recipe. I used 1/4 cup melted semi-sweet chips instead of cocoa b/c I didn't have cocoa. I cut the sugar some to make up for this. I also didn't have butter/margarine and substituted the same amount of grapeseed oil. This cake was so delicious and not too sweet at all! I like the texture the oatmeal gave to it. I can't wait to make it again.

Amazingly good for the amount of effort required! While they don't replace the real thing, they are an excellent substitute when you want/need something quick. This recipe is definitely a keeper.

Raspberry and Almond Shortbread Thumbprints

These remind of Pecan Sandies! I cut the recipe in half, added 1/4 cup of almond flour, and a couple of teaspoons of lemon zest. The dough was very easy to form into balls. I put them in the fridge for 10 minutes before baking, but this made them hardly drop at all, so I ended up mashing them down with a fork 10 minutes into baking. I didn't do the filling or glaze; they were great as is.

Winter Squash Risotto

This was okay. I made it because I was looking for a way to use up some winter squash I had in the freezer. I used chopped turkey sausage instead of bacon. I probably should have cooked my onions longer and not used so many. I may try this again in the future, but will probably decrease the onions to 1/4 cup because the onion flavor was a bit strong for my tastes.

Brown Sugar Meatloaf

I absolutely LOVE the ginger in this. I also added green bell pepper to mine and let it sit covered in the refrigerator for a few hours to allow the flavors to all blend. I don't care for the brown sugar ketchup mixture being on the bottom, however, hence the 4 stars.

Chantal's New York Cheesecake

This was delicious. I used a mixture of vanilla wafer crumbs and graham crackers for the crust because I didn't have enough of the latter, and the crust was still delicious. Also, for the filling portion, I reduced the recipe by 3/4 so that I only needed only 3 packs of cream cheese. This was actually plenty and filled my pan. Great recipe! Thanks!
