I just finished making this and it is DELISH! I added chopped garlic in with the onions, and skipped the step of sauteing them in the bacon drippings, they were plenty soft after so long in the crock pot. I used red potatos and after seven hours they were no where near tender. I will use a different potato next time, but I think it would have been fine if I had cooked it on high instead of low. It ended up taking twelve hours after I turned it on high. I also blended a little more than half the soup after I added the flour, half and half, and milk. The soup was not thick and creamy until I did that. Afterwards it was perfect! Like a bisque with a good amount of potato chunks left in. I also mixed in a cup of cheese at the very end and some butter. So very good! I have not even added the cheese, green onion, and bacon to top it and it is awesome! I could eat this just the way it is!
