Smoky Steak Marinade

Reviewed: Mar. 4, 2013
Nice smoky flavor BUT way too salty. I kinda thought it may be so I had reduced the seasoned salt to 2T and increased the garlic powder (we really like garlic.) It was still just on the edge of being too salty to eat. Will definitely make again but decrease the seasoned salt to 1T, maybe add some of my own seasonings and some chopped garlic cloves. Cooked up really well though. Took a photo but my phone apparently doesn't take a large enough file, lol.

Creamy German Coleslaw

Amazingly good. Just like my most fave slaw from a certain fast food restaurant. I used bagged slaw mix to make it even more simple.

Italian Wedding Soup

Reviewed: Feb. 20, 2013
Wonderful! It was a cold & rainy night last night and I was looking for a soup recipe. I've had this canned before and loved it so decided to give it a try. Used the Johnsonville Mild sausage (which I ALWAYS have in my freezer!) and increased the cayenne to give it a bit more bite. Used a bit less of the fresh ground fennel seed and added a small amount of chopped fresh fennel bulb with the celery. Right at the very end I added about 1/4 cup of lemon juice to "brighten" the flavors. To serve I placed a serving spoon of the orzo in the bottom of a bowl, topped it with a handful of chopped fresh spinach and then ladled the soup on top of it. It was so good that no one in my family said a word for the longest time. They were too busy eating!!! Definitely added to my recipe box!

Mark's Cabbage and Hamburger Delight

Reviewed: Feb. 7, 2013
While this was a simple recipe, my family was not impressed. It is certainly edible, but has no real flavor. It's quite bland. Everyone ate it but asked that I not repeat it.

Hamburger Quiche

Reviewed: Jan. 25, 2013
Really, really good. Husband even had seconds! Fried 2 slices of thick bacon and crumbled into the final mix. Added 2 cloves of minced garlic while cooking meat. Wish I hadn't added the last topping of cheese but I know better for next time. Otherwise it was quite tasty.

Pepper Corn

Reviewed: Jan. 21, 2013
Great!!! Everyone liked it and even had seconds. I can totally see using this as a dip instead of a side dish which I may do for SuperBowl potluck. Pure corn heaven. As far as healthy, our house lives by the "everything in moderation" rule so it's certainly not a problem.

Pork Tenderloin Diane

Reviewed: Jan. 21, 2013
Wonderful! Simple to prepare, 4 min each side turned out a perfect meat. Let them sit, covered, while I prepared the sauce. Deglazed with sherry and tripled the sauce because I knew my guys would want more of it. Served with garlic mashed potatoes and the peppered corn recipe I found on this website. We were all quite pleased with dinner.

Old Irish Scalloped Potatoes

Reviewed: Jan. 16, 2013
Good but I layered the potatoes with thin onion slices and grated cheddar cheese. I then combined melted butter, 1/2 & 1/2 and a small pour of sherry which I then poured over the layered potato mixture. Baked at 400 for 45 minuets. Got raves from my family.

Not sure what I did wrong but these turned out awful. MIGHT try them again some day just to check my prep.

Pecan Crusted Pork Chops

Reviewed: Nov. 30, 2012
So after reading previous reviews I took their advice. I used Dijon mustard and real maple syrup instead of the flour/egg mix. I did fry in butter because there are just some times that using real butter adds a flavor you can't get with olive oil. I also had to "hold" dinner until everyone was here so I fried them and then let them sit, covered, on the stove. Popped into the oven when we were ready. They turned out perfect! So moist and delicious. This one got RAVE reviews from the family. This is going to become a staple in our house.

Garlic Delicata

Reviewed: Nov. 11, 2012
A really great side dish. Easy to make. Because of my family's tastes I increased the garlic to 7 cloves and switched the parsley to chives. Garlic came out nice and crispy which added a crunch to the smooth texture of the squash. Saved the seeds for planting of course!

Pesto Pasta with Chicken

The only thing I changed was to add 1/2 thinly sliced onion to the garlic. I thought it was ok, but will not make again.

Wow! I added a couple of thinly sliced green onions. I thought about using sesame oil but opted for safflower. This was better than it sounded. Glad I tried it.

Creamy Au Gratin Potatoes

Reviewed: Nov. 7, 2011
Great recipe, although I did make some personalizations - I used one large scallion in place of the onion, used 3 cloves of garlic, roughly chopped, a mix of 3 cheeses (cheddar/smoked gouda/romano), and whole cream instead of milk. RAVE reviews!!!

Overnight French Toast

Reviewed: Oct. 19, 2011
Absolute lifesaver sometimes. If we are attending an event the night before I always use this recipe (been in my family for years!), and along with the oven fried bacon...my Saturday/Sunday mornings are that much less intense.
