Fusion Hummus

Reviewed: Aug. 21, 2012
I made the recipe as stated but I felt the hummus was too thick (which is why I gave it 4 stars). I added an extra 1/4 cup or so of water and got a much smoother consistency. I love the flavor. I use Con'Olio's 18 year balsamic vinegar and it is the most amazing thing ever. A bit spendy but worth every penny. http://www.conolios.com/index_files/Page438.htm

Whipped Cream

Reviewed: Jul. 26, 2012
I believe in rating the recipe as stated and as stated, it was not quite sweet enough. I added an extra tablespoon of powdered sugar and that brought it up to 5 stars.

Cocktail Meatballs

Reviewed: Jul. 26, 2012
I made these once with store bought meatballs and once with the recipe. The store bought meatball one turned out great. When I made them from scratch, I used Panko breadcrumbs. I cooked and cooked them and they just never seemed to really firm up. Some of them were breaking apart as people tried to scoop them up from the crockpot. They tasted good but were brittle. The sauce is really good. It's pretty sweet, though. I made the sauce and meatballs separately the night before, mixed them together, and let them sit overnight. Threw them in the crockpot on low about an hour before the party and it was perfect! If it weren't for all the extra fat and garbage ingredients they put in storebought meatballs, I would say that's totally the way to go as I didn't feel the flavor was any better in the from scratch ones once the sauce was put on.

Party Pinwheels

Reviewed: Jul. 26, 2012
The ranch was very overpowering in these and I didn't care for it. Others recommended using 1/2 packet of ranch and that might make a big difference but I did not like the recipe as is. It was a quick, easy, and attractive enough recipe that I would try it again using the modification. I used tomato basil tortillas and they made for a nice, colorful presentation. A little tip when making pinwheels is to spread the filling to within about 1/4" of the edge of the tortilla but not all the way to the edge. This will keep the cream cheese from oozing out when you wrap them. Also, leave just a small margin of cream cheese without toppings on it at the edge to "seal" the tortilla against itself.

Bacon Wrapped Smokies

Reviewed: Jul. 26, 2012
I followed other reviewers suggestions by using center cut bacon and dipping it in brown sugar and then wrapping the smokey in the bacon in the brown sugar bowl. I wrapped them the night before and then left them sitting in a bowl overnight to make for quick cooking the next day. I followed another reviewers idea to cook them at 400 for 40 minutes and then broil the last 4 minutes...BAD IDEA. They looked really dark after 40 minutes! I would either cook them as the recipe recommends or higher heat for shorter time (seems obvious, I know, not sure what I was thinking). They tasted ok with the recipe as stated but then I put them in a pan with the juices that were left from them sitting in the bowl overnight along with 1/4 cup maple syrup as other reviewers recommended and they were MUCH better (the 1 star was taken off because they were a little bland before the addition of the maple syrup). The maple flavor definitely adds a lot. These were a big hit. Next time I'm going to be more careful about watching them while they are in the oven. I didn't use toothpicks because the bacon stuck to the smokies. After cooking, a FEW of them came unwrapped so I stuck toothpicks in them to hold the bacon on. Next time, I will use toothpicks on all of them because we set these out on a plate and people grabbed the ones with toothpicks first because they were easier to pick up.

Seven Layer Tex Mex Dip

Reviewed: Jul. 26, 2012
First of all, let me be up front that I did not add the mayo to this recipe. I didn't really care for this, though. I thought the taco seasoning way overpowered the other flavors and the smoothness of the sour cream. If I made it again, I would do it without the taco seasoning or with maybe 1/2 packet. I made it in an 11x7 pan and that seemed to be the perfect size. It was quick and easy to make and made for an attractive presentation. Other people at the party really liked it but I would not eat it again as is.

Avocado, Tomato and Mango Salsa

Reviewed: Jul. 26, 2012
I didn't actually eat this (I don't like jalapenos or red onions) but I made it for a party. Mine didn't look anything like the picture, it turned out more gloppy-looking. People said it still tasted really good though. I was struggling with how to cut the mango and I found a YouTube video that made it REALLY easy. I applied the same principles to the avocado then. The video is: http://www.youtube.com/watch?v=lvLdPjpELyU Overall, I guess the taste was good but I wasn't wowed by the presentation.

Grilled Garlic Parmesan Zucchini

Reviewed: Jul. 17, 2012
This was pretty good but didn't seem to have a lot of flavor. I added a little salt and that seemed to help. I think maybe a bit more seasoning next time.

Extra-Easy Spinach Lasagna

Reviewed: Jul. 17, 2012
I agree! This was FAST, EASY, and TASTY! I used an 11x7 pan and just broke off the corners of the noodles so they would fit better in the rounded corners of the pan. I would definitely make this again and recommend it to all my non-cooking friends!

Quinoa Black Bean Burgers

Reviewed: Jul. 7, 2012
I made these exactly as the recipe states and also tried baking them in the oven and they were awesome! So good I made them again as soon as I ran out! I wrapped them in lettuce and put tomato slices on them to skip the bun. I actually like them hot or cold. SOO GOOD! I tried them with bread crumbs and oatmeal and felt they tasted about the same either way. I stopped putting the hot pepper sauce in it because most of them have MSG in them and instead added some cayenne pepper. Tastes the same and no MSG!

Quinoa and Black Beans

Reviewed: May 30, 2012
I really liked this! I doubled the recipe but added 3 cans of beans instead of the suggested 4 and it seemed like a good amount, though I'm sure more would have been fine, too. I added some tomatoes and lemon juice per other reviewers but neither seemed to add any noticeable flavor. This was a great, easy, quick, healthy recipe. I really liked it! Also, I forgot to rinse the quinoa first and it still came out great.
