Vegetarian White Bean 'Alfredo' with Linguine
This really doesn't taste anything like alfredo but it has become one of my favorite recipes! I make it with regular milk instead of soy milk and green beans instead of asparagus. I just love the white bean sauce. And you get some protein too!

Pesto Penne Primavera
This was SO GOOD. Definitely will make again. It wasn't that time consuming, either. The only changes I made were to omit the olives and substitute green beans for asparagus. I especially loved the toasted pine nuts in it. My dad told me how to roast a red pepper: cut it into flat pieces and put them skin side up under the broiler until they turn black, then peel the black skin off. It turned out great. I might actually put in more veggies next time.

Artichoke Spinach Lasagna
I did not cook the noodles beforehand, and I baked the lasagna uncovered because I didn't have anything to cover it with. It turned out a little bit dry (which I prefer to an extent so that was okay) and some people would probably want the noodles to be a little softer. It worked pretty well though. Great flavor! I also topped it with parmesan cheese instead of feta. Chopping the artichokes was a huge pain because they're so squishy and slippery...I think they might sell them pre-chopped and if so I'm definitely buying those next time...
