Simple Roasted Butternut Squash

Wow! This was really good! I'm normally a bit of a squash hater, and I only made this because I happened to have a squash sittin'around. I may have now been converted to a squash lover!

Garlic Kale

I seriously love this recipe. So simple, but sooo good. I always end up eating most of my portion while I am cooking the main dish. I follow other reviewers' advice and steam the kale first for about 5 minutes, until it is bright green. I also add a bit of salt at the table. They're also good without salt, but with is even better!

Broiled Tilapia Parmesan

I just made this last night, and loved it! I followed the recipe exactly, making 4 servings. I did think it was just a touch salty, so if you want to reduce that you could probably try celery seed instead of the salt, like other reviewers have mentioned. Oh, and I used the dry grated parmesan from a can, even though I wasn't sure if that was correct. It does cover up the flavor of the fish, so if you like the taste of fish it may not be for you. Luckily, I like the texture of fish a lot more than the taste, so this was wonderful.

Annie's Fruit Salsa and Cinnamon Chips

Loved it. Exactly what I was looking for. I used a nectarine instead of the kiwis, apricot preserves, and left out the white sugar (as others advised). And, I chopped everything into very small bits (maybe 1/4" square). It was delicious.
