Baked Kale Chips

Reviewed: Jan. 17, 2015
Actually way better than I thought they'd be. Would give 5 stars but it's a lot of prep for the amount of finished product since the kale shrinks so much.

Honey Roasted Carrots

Reviewed: Jan. 13, 2014
Tried this for the first time and it was a hit! Threw in some chopped pecans, used half the olive oil, and threw in 1 tbsp. agave. Will definitely be doing this again!

Zesty Chicken Meatloaf

Reviewed: Feb. 19, 2013
Delicious! Only changes to original were to cut bread crumbs down to 1 cup and spread additional salsa on top before baking to keep it from drying out. Served it with Goya Black Beans & Rice and a veggie...meal was a hit!

No Bake Peanut Butter Pie

Reviewed: Feb. 17, 2013
I used some suggestions from others to make it Weight Watchers friendly. I used reduced fat cream cheese, Splenda(1cup), Simply Jif peanut butter, 1/2 cup skim milk, ad 12 oz. Cool Whip. I spread the remaining Cool Whip on top and decorated with chopped mini Reese Cups and a drizzle of chocolate syrup. The result was absolutely delicious!

Parmesan Baked Potatoes

Reviewed: Apr. 12, 2009
These were awesome! Only thing I did differently was add sprigs of rosemary and sage while the potatoes baked. These were also wonderful leftover, sliced into wedges and reheated in a bit of olive oil on the stove.

Wow! This pork tenderloin was the best ever. Fixed exactly as is and everyone raved...even picky teenagers! Served with Rosemary Red Potatoes (this site) and homemade applesauce for a fabulous Sunday dinner.

This dip is a huge hit every time I make it. In addition to fruit, I served Cadbury chocolate dipped cookie sticks and everyone gobbled them up!

Chewy Cocoa Brownies

Reviewed: Feb. 19, 2006
I usually avoid homemade brownie recipes because they come out dry. This was the BEST brownie recipe ever. I added mint m&ms to one batch and they were a huge hit with adults and teenagers alike! Today's batch will include Reese's Pieces. Thanks for a keeper!!

I also added extra cheese and had to cook a bit longer, but it was delicious! I will make this again and again!

Blueberry Scones

Reviewed: Feb. 8, 2001
My family begs for these scones! I found it was more like a batter than a dough, so I skip the kneading and just drop into 2 large rounds or 12 smaller rounds. I have also used raspberries and blackberries.

Rich and Chocolaty Syrup Cake

Reviewed: May 1, 2000
I frosted this cake with whipped cream which added a nice light touch to this rich cake. Also works well as a sheet cake.
