Nutty Granola II

Good base recipe. I halved the recipe and used what I had on hand: 1 C rolled oats and 2 C quick-cooking steel cut oats. Brown sugar instead of honey. Pecans as only nut. Added vanilla, fresh orange zest and a little cinnamon to the liquid mixture. Used assorted dried berries and golden raisins. Most importantly, baked only 13 minutes. I like the chewy texture of the steel cut oats when I mix this granola with yogurt. The orange zest punches up the flavor. I'm going to continue making it with these variations.

Rich Italian Sausage and Potato Soup

I have made this twice, and I'll be making it again. The first time, I followed the recipe but substituted bacon for pancetta. I also used my stick blender to purée some of the potatoes before I added the final ingredients. It helped thicken the soup. The second time, I used leftover ham in place of both the bacon and sausage. Delicious both ways.

Spicy Orange Zest Beef

Tasty! Served with red and orange peppers and lo mein noodles. I cooked too many noodles, so I added beef broth to a double batch of the marinade. Will be making again.

Taco Seasoning

A great salt-free alternative. I mix this 3-to-1 with the low-salt version I buy at the supermarket. My family finds even the low-salt version too salty, and we find this recipe a little bland. So, by mixing 1 pouch from the store with 3 batches of this recipe, I've come up with a great combination.

Meringue Kisses I

Easy and fabulous. I used 2 tips I found in a review here: I used a piping bag to put the meringues on the baking sheet, and I put them in the turned-off 350 degree for a half-hour and then baked them at 200 degrees for about 45 minutes. Everyone loved the s'mores taste. Perfect!

Tomato and Mozzarella Bites

Simple. Pretty. A tasty appetizer. I served them upright (shave a little off the bottom of the tomato if the skewer won't stand up) on a platter, drizzled with the oil & vinegar. Rave reviews from guests.

Quick Ziti with Swiss Cheese and Ham

Simple and tasty! I used whole wheat penne. I chopped leftover ham and grated extra sharp cheddar (also a leftover). I added finely chopped onion to the ham and cooked both in a little oil. I served it with a green salad. A simple, post-holidays meal!

Homemade Horseradish

Outstanding! The hardest part was finding the horseradish root at the grocery store. Do not make too far in advance of the meal, as the horseradish loses power the longer it sits.

Pineapple Angel Food Cake I

Excellent! I only made 2 changes to the recipe: I followed the suggestion to add vanilla to the cake, and I used "real" whipped cream instead of cool whip. It received rave reviews both times I served it. A keeper!

Chipotle Crusted Pork Tenderloin

Excellent! Like others, I used McCormick's Chipotle Chili Pepper in the rub. The pork disappeared in record time, and this is now on regular rotation in our monthly menu! The rub is also great sprinkled on burgers or on chicken.

Rocky Road Caramel Apples

Excellent! I dipped the apples in caramel and drizzled with the melted chocolate. I skipped the "rocky road" part. The kids loved them. They sold out at the bake sale in minutes!

Individual Beef Wellingtons

Easy to make and looks impressive when served. I used suggestion of adding swiss cheese and it was good. I used red wine instead of dry sherry -- that worked fine, too. Will definitely make again.
