The Best Vegetarian Chili in the World

Very delicious. Will definitely make this again. Cut back to 1 can of tomatoes. Added 1 serrano. Replaced one can of beans with one can of chili beans (seasoned.)

Sauteed Swiss Chard with Parmesan Cheese

A really great way to use all of the chard I get from our local CSA! This will be a regular dish. Substituted chicken broth for wine. The lemon juice and Parmesan add a great dimension of flavors.

Buttermilk Pancakes II

The BEST pancakes. I would chose these over french toast (my ultimate favorite) anyday. As long as the baking soda and powder are w/i their expiration date, the pancakes will be very light and fluffy. Mine were even a little moist! My roommate and I ate almost 2/3 of the recipe. I put the rest in the fridge, and toasted them in the toaster over for breakfast the next day. Just as good!

Delicious! I followed the advice of others and used double the amount of jam (peach.) These really are soft. The cream cheese adds a tangy flavor. Yum!

Butterscotch Rum Pound Cake

Delicious! I could taste a hint of rum in the end. I would suggest sprinkling a little extra rum to give it an extra kick. I am definitely making this again.

Vegan Cheesecake

If you like soy milk, you'll love this cheesecake. Even better when matched with a strawberry compote. :) My roommate who hates soymilk thought it was okay. Try it!

Tofu Parmigiana

Delicious! The pan frying portion of this recipe was difficult, but the end result was fanatasic! The crumbs were not well-adhered to the tofu but don't worry, the tomato sauce covered that fact. Better than eggplant parmagiana! I was a little sketical about the tofu-cheese combo, but it turned out great!

Pumpkin Cookies I

Absolutely delicious! The cookie just melts in your mouth with the buttery taste of the butterscotch chips. I used 1 c. butterscotch chips and 1/2 c. chocolate chips. I increased the amount of cinnamon to 2 tsp. and added 1 tsp nutmeg.

Cream Puff Cake
