Juicy Roasted Chicken

Love this recipe! The chicken is so moist! I like to put more celery inside, but I stick to the rest of the instructions. A perfectly juicy roasted chicken!

Fiery Fish Tacos with Crunchy Corn Salsa

WOW! My husband and I just ate this and it is SO yummy! I love the crunchy texture in the salsa, plus it makes for a colorful and impressive looking dish. We added chili powder to the fish spices and cut back on the cayenne (mostly because I was afraid it would be a little too hot). Came out great! Thank you for this recipe! Definitely restaurant quality!

Delicious Ham and Potato Soup

My husband said this is one of the BEST soups he's ever had! Although it tastes more like a chowder because it's so creamy! Made it exactly like the recipe and added chives on top like the video recommended. I used a good size pinch of salt and it was a little too salty, especially since Ham is already pretty salty. Smaller pinch next time :) Overall though, definitely 5 star worthy!

Artichoke & Spinach Dip Restaurant Style

I cannot believe how good this tastes!! Seriously tastes JUST like it's from a 5 star restaurant! My brother-in-law said it was the best dip he has ever had! I have made this twice now and the first time I made the mistake of using fresh artichoke. SO NOT worth the mess plus it is actually much much more expensive than using a jar or can of artichoke hearts- like the recipe calls for ;) I also diced up roma tomatoes on top like the picture shows. Probably THE BEST recipe I have found from allrecipes.com

Coconut Chicken Stir Fry

This was delicious! I made it because I had pretty much all the ingredients. If you don't, it's going to be a pricey meal because there are a lot of ingredients. We served it with brown rice, but was also really tasty in a wrap. Tip on ginger: We keep ours in our freezer and it has lasted months! We bring it out for our favorite Thai meals. I think it's also a little easier to grate when frozen ;)

Pesto Sauce

This was my first time making pesto sauce, and it was so simple to make! I ended up adding more olive oil to my pesto pasta for a "smoother" texture. I will definitely make this again, very soon!

Brownie-Mallow Bars

This is the second year I've made these to pass out to friends and neighbors during the holidays and I always get such great compliments on them. They are so gooey and delicious, and the crunch from the rice crispy puts it over the top! I recommend using Betty Crocker's fudge brownie mix and under bake by a few minutes so that when you put the marshmallows on top and continue cooking the brownies won't get too done by the end. Cover the entire brownie mix with the marshmallows because once they're baked you don't want to try and spread or smear them or you'll just get a mess. Really let it cool before pouring the chocolate/peanut butter topping on so the marshmallows won't smear off. Such a good recipe!

Roasted New Red Potatoes

Really good. Placing cut side down makes them more crispy. I cut each potato into fourths or smaller and equal in size so they cook evenly. Also delicious with dried garlic and rosemary seasoning

Antipasto Pasta Salad

I love this recipe and I have already made it several times. Like some other reviewers, I also recommend Newman's Own Light Balsamic Vinaigrette. I really preferred it over the homemade dressing (the texture was a little gritty, I think because of the oregano)

Angela's Awesome Enchiladas

Delicious!! I'm so glad someone recommended the crock pot because it really saves on work without taking anything away. I followed the advice of the first "most helpful positive" review from Jen Uhrlaub. I easily shredded the chicken right in the crock pot after it had been cooked for a few hours on low (I had small chicken breast tenders) and then added the cream mixture to the pot in the end right before assembling. We'll definitely be making these again!
