Corn Fritters

Reviewed: Jun. 22, 2012
made just a couple changes based on what I had. Increased the sugar to a teaspoon as suggested. used creamed corn plus a couple left over cooked ears of corn (cut off the corn) omitted the milk and oil due to cream in corn.

Red Beans and Rice

Reviewed: Jan. 29, 2012
Good! For my tweaks I cooked the rice in the broth from a can of French Onion Soup, reserving the onions to add into the dish later. I used the broth from the soup mixed with water to come up to the quantity needed to cook the rice. Also added some bannana peppers for a little zing.

Wonderful...it was so good my dogs jumped up on the counter and ate it so I had to make another one. Oh well, those things happen!

All-Day Apple Butter

Reviewed: Oct. 18, 2009
Yes, you definitely need to gauge the amount of sugar relative to the types of apples you used. Not sure of the type I used but they were on the sweeter side so I should have cut the sugar some. Overall a good and easy recipe!

Teriyaki Chicken for the Busy Cook

Reviewed: Jul. 5, 2009
very good. Next time I'll let it maranade a bit prior to cooking so the flavor soaks in better. Mine was also a bit dry so I'll cover with foil next time.

Very good. I didn't have any peacans on hand so I used walnuts and that seemed to work fine.

Very yummy. Family loved it. Hubby bought pecans instead of walnuts, but that worked great!

Went over very well, although I used lite Cool whip, and I think that regular would make it even better.
