About this Cook
I am a disabled computer programmer, freelance writer, craftsperson, cat caretaker. I'm diabetic, so I must watch what I eat, but am gradually shifting my tastes to whole-grain choices and less carbs. I'm getting used to lower salt in my cooking, so I'm always looking for substitutes for my one-time favorite easy-cook meals (such as Rice-A-Roni, Hamburger Helpers, etc.)
My favorite things to cook
All-in-one dishes (casseroles, skillet meals, etc.), meals that can be put to cook and ignored until they are ready. Sweets (yeah, that's a problem...), especially chocolate.
My cooking triumphs
I recently made some fried rice for my self and a couple of friends, even though I couldn't find Mom's recipe. The result was good enough that the only reason there was any leftovers (for my lunch!) was that I made a big batch.

Lemon Garlic Tilapia
I've finally found a fish I actually like and this is a great way to cook it! I added a couple of tablespoons of finely minced onion, used dill instead of the parsley, and served with rice cooked in cream of mushroom soup. Ohh, mmm, delish!!! The garlic flavor is subtle, not overwhelming. Everyone ate their alloted portions and were looking for more! I'd call this a keeper!

Creamy Potato Soup
This was a terrific dinner soup. I skipped the celery (mine was a little old...) and added more carrots. I cooked the veggies in broth and added some roasted garlic. Once the veggies were tender, I drained the fat/broth from them before I added the milk. Finally, I used Wondra instead of flour for thickening and completely skipped the paprika. Topped with a little shredded cheese as well as the bacon and served with honey cornbread. Best sign of a good recipe? No leftovers!

Garlic Bread
Smelled absolutely marvelous, making everyone in the house hungry and impatient! Tasted good, altho' not very garlicky, and texture and density were perfect. I don't know why other people have had problems with this -- I quite like it, but will try a little more garlic next time, or plan on serving with garlic butter for those who like a stronger flavor.
