Hudson's Baked Tilapia with Dill Sauce

I am giving this five stars because this recipe has made me like tilapia. I have always hated tilapia when anyone made it. It has always tasted so bland but this recipe rocks. I did alter it a little bit. For the sauce, I added more dill, a bit more lemon, salt, pepper and minced garlic (from a jar) to taste. Based on the original recipe I tasted more sour cream than anything. I also decided that I wanted a little crunch so I mixed the cajun seasoning with cornmeal, breaded and baked the fish at 425 for 12 minutes. No need for salt and pepper with Cajun seasoning. This will be part of my rotation, thanks for making me a tilapia lover!

Roast Chicken with Rosemary

I love this recipe. This was my first roasted chicken and it was a hit. The store ran out of fresh rosemary so I had to use dried rosemary on the outside of the chicken. I stuffed the cavity with onion and garlic. Very tasty.

Garlic Mashed Potatoes Secret Recipe

I like this recipe. I had ever intent of following the recipe with the exception of roasting my garlic. For some reason I could not find my oregano so I had to do without. Next time I make it I will be sure to go out and buy fresh oregano to give that a try.

Buffalo Chicken Dip

This recipe was just what the doctor order for our weekend cabin snack. I used 2 large boneless chicken breasts, 1 cup blue cheese dressing, 1 cup frank's hot sauce and 1 8 oz blue cheese and that seemed to make plenty. I also used the mexican blend cheese cause that's what I had on hand. This recipe will make me a hero when the super bowl comes around. Oh yea, I also layered my dip.

One Dish Chicken Bake

This recipe is good for what it is, a quick and easy meal. I liked that I had all the ingredients on hand (except milk). I was concerned about not having enough flavor so I did flavor the chicken with onion powder, garlic salt, celery salt and s/p. Not sure how much it did but it sure wasn't bland. I backed muy chicken for about 40 minutes and I used boned thighs. You also don't need exactly a quarter cup of butter as I was a tablespoon or so shy and it was still good. You could probably get away with just chicken, stuffing, soup and water with some seasoning. I used traditional sage stove top stuffing.

Pasta Carbonara I

I am a grad student and this recipe was super easy and affordable for me. I used dreamfields low carb penne for mine. I also added mushrooms and onions. I think it is important to go a little bit over the ingredients. I made this twice since I didn't want to waste the cream or parmesan (two things I don't normally use). The second time I went a little more than what the instructions asked for all the cream, cheese, and butter and it was even better. I agree to save the bacon drippings and put some in the mixture at the end.
