Slow Cooker Cheese Steaks

My husband and I found this dish rather bland. I was a bit concerned about this seeing that it called for no seasoning on the meat or the veggies, so I even added salt and pepper to the grilled veggies. We also used pepper jack cheese and used the leftover broth for dipping but overall the sandwiches just seemed lacking in flavor. If I were to make this again, I would brown the meat first with some garlic salt and pepper and maybe even some flour and then place in crock pot. I find from making roasts in the past with tri tip that this tends to seal in the juices. Definitely found 3.5 hours was plenty of time for the meat. It was still pretty tender (not chewy thankfully) but already dry and cooked through. I think the leftovers are going to make some awesome fajitas tomorrow, though!

Baked Carrots

I read the other reviews before making this dish and made sure I split the baby carrots in half before placing in dish (because the batch I had on hand seemed rather thick) and then sprinkled them with garlic salt before pouring on the broth. I thought they were yummy!

Caprese Burger

Delicious! Served on Hawaiian sandwich buns with a little mayo. For anyone wary to open up a whole can of tomato paste for just a small amount, just divide up the rest into small sandwich baggies in small amounts (1 tablespoon each ought to do it) and then toss all those baggies into a quart sized freezer bag labeled and dated and freeze for later use. They'll defrost fairly quickly under running warm water.

Rachel's Tomato Basil Soup

I'm rating this based on the original recipe, but will tell you how to make it a 4 star. Day one we found this soup to be bland, boring and uninspiring. Day two it had a more intense flavor, but still lacking. I had made some pesto (All Recipes Spinach Basil Pesto) and put a dollop into my bowl of soup and then it was YUM!

Oven Scrambled Eggs

I cut this recipe in half and can't imagine it fitting in a 9x13 pan with the whole amount. I used a slightly smaller pan, but next time I will use the 9x13 with the recipe cut in half. I found it called for too much butter, milk and salt. A little less all around and I think this will turn out great.

Pesto Grilled Cheese Sandwich

All we tasted was pesto. Good thing I made a good one. All in all, expensive for grilled cheese. I'd rather have the basic grilled cheese (not with American though) where the cheese is the star.

Chicken Cacciatore

Um... yum! OK, I admit it, I didn't follow the recipe to the letter. After reading the reviews, I made some modifications. I cubed, floured and seasoned the chicken and browned it a little first then added about 3 cloves of fresh minced garlic for about 30 seconds and then added the rest of the veggies, including chopped mushrooms. I used Italian stewed tomatoes, just a few dashes of the garlic powder since I had fresh garlic in there already, Italian seasoning instead of just oregano, and about 1/2 tsp of sugar to balance the tartness of the tomatoes. Next time, I will cut back on the pepper since I had salted and peppered the chicken and it was plenty spicy. Served it with pasta and freshly grated parmesan cheese. Will definitely make again!

Best of Everything Veggie Burgers

First attempt following directions (2 stars): Wow, I'm not sure what was so great about these. Ours were dry on the outside and mush in the middle, so maybe something was lost in the cooking technique, but we followed the directions so I don't know what went wrong! I was hesitant about using as much cumin as it called for but did it anyway. I LOVE cumin, but that's all these tasted like. Really? All those awesome ingredients and all I got to taste was cumin? I think spices and herbs should enhance what's there, not over power it. EDIT (Second attempt - 4 stars): I had some mix leftover because we only made 4 burgers so the next day I added a bunch more bread crumbs, made the patties smaller and thinner and pan fried them. I also used BBQ sauce instead of ketchup on the burger. This way of cooking it up wasn't as healthy but brought the flavor and texture up from a 2 star to a 4 star rating! If you have a small family, cut the recipe in half or be prepared to cook up a lot extra and freeze them for later.

Baked Oatmeal I

Yum! I used steel cut oats since I didn't have quick oats on hand so the texture wasn't very kid friendly, but it tasted just like an oatmeal cookie. I will only make it as a special treat because of all the sugar content!

Broccoli Mac and Cheese with Bacon and Potato Nugget Topping

Not great. Couldn't taste adobo at all, even with half the amount of pasta. I substituted BBQ chicken because I didn't have bacon. Pre-cooked potatoes for about 10 minutes to make sure they were done and a little crispy. It was OK, but nothing to write home about, and it was definitely a lot of mess to clean up with preparation. Fortunately, I could clean while the meal was cooking, which was a bonus. Would work best for a side dish at a potluck instead of a main dish at home, especially with the fat content.

Oven Roasted Red Potatoes and Asparagus

I just sprinkled on herbs instead of putting as much as called for and minced about 4 to 5 garlic cloves (which was plenty). I followed another reviewers advice about 30 minutes for potatoes in the oven followed by 5 minutes covered asparagus and 5 minutes uncovered. I didn't use as much salt as called for and it was still too salty for my tastes. I would cut it down to maybe 1 tsp total or less.

Chicken Avocado Pizza

As stated = boring! I had to add garlic salt, onion powder and dried basil afterward to give it a little more dimension. Still not great. I'm keeping it as a reference for another meal with which to use leftover chicken, but next time I'm going to find a way to add some real flavor (onions, salsa, cumin or something). I also think this would work best with a really thin crust. I used a thick one and it really took away from any flavor the toppings may have provided. Maybe I'll try tortillas as a crust next time.

Pineapple Fried Rice II

Garlic Chicken Fried Chicken

Yummy! I wasn't completely keen on the seasoning, but I loved how well the bread stayed on compared to our usual way, and the crispiness of it was perfect. I think I would use plain bread crumbs instead of seasoned ones next time and cut back on the garlic a bit (original poster said it was supposed to be 2 tbls not tsp, but I think next time I'd try tsp). We cut up chicken into large pieces to be more like chicken fingers and made a creamy gravy from the drippings.

Chicken and Biscuit Casserole

Turkey Veggie Meatloaf Cups

Yummy! Added salt, pepper, garlic powder, used 1.25 lbs of ground turkey (because that's how much came in the package I bought), refrigerated for a couple of hours, used cupcake cups (the foil kind), and topped with a mix of BBQ sauce & ketchup. It made a whopping 24 "cupcakes," so next time I'd freeze some uncooked or just cut the recipe in half. Hubby didn't care for it much but he's a picky eater and doesn't like ground meat or zucchini. Kids take after him and wouldn't even try any. More for me!

Cheesy Sausage Pasta

Pretty good. Found that this recipe relied too heavily on the parmesan cheese for flavor. My husband doesn't care for it too much so I went lightly on it for his sake and it was bland. I should have added salt to make up for it. I used Italian chicken sausage which I mostly cooked before throwing in the vegetables rather than the other way around. I'd make again with some modifications. Mushrooms would have made this dish better but I forgot to buy some.
