Slow Cooker Cheese Steaks

My husband and I found this dish rather bland. I was a bit concerned about this seeing that it called for no seasoning on the meat or the veggies, so I even added salt and pepper to the grilled veggies. We also used pepper jack cheese and used the leftover broth for dipping but overall the sandwiches just seemed lacking in flavor. If I were to make this again, I would brown the meat first with some garlic salt and pepper and maybe even some flour and then place in crock pot. I find from making roasts in the past with tri tip that this tends to seal in the juices. Definitely found 3.5 hours was plenty of time for the meat. It was still pretty tender (not chewy thankfully) but already dry and cooked through. I think the leftovers are going to make some awesome fajitas tomorrow, though!

Baked Carrots

I read the other reviews before making this dish and made sure I split the baby carrots in half before placing in dish (because the batch I had on hand seemed rather thick) and then sprinkled them with garlic salt before pouring on the broth. I thought they were yummy!

Cheesy Chicken Meatballs

These were awesome with this yummy alfredo sauce on top of linguini and veggies.... AR's Alfredo Sauce II. I didn't see the author's comments and added the oil into the mix but they turned out fine. I used regular soft cream cheese, Italian style bread crumbs (since I had them on hand), cut the Italian herbs in half (since they were in the breadcrumbs already), and refrigerated the mixture for a few hours before making them into balls. My husband doesn't care for ground meat of any kind but he went for seconds on these and gave me the go-ahead to add this recipe to our regular rotation. I saved some of the mixture to make Chicken burgers the next day as one user suggested. Can't wait to try them that way, too!

Garlic Chicken Fried Chicken

Yummy! I wasn't completely keen on the seasoning, but I loved how well the bread stayed on compared to our usual way, and the crispiness of it was perfect. I think I would use plain bread crumbs instead of seasoned ones next time and cut back on the garlic a bit (original poster said it was supposed to be 2 tbls not tsp, but I think next time I'd try tsp). We cut up chicken into large pieces to be more like chicken fingers and made a creamy gravy from the drippings.

Grandmother's Buttermilk Cornbread

I'm giving this 4 stars because I think it would have been great if I'd done the recipe exactly as called for, but because I didn't have all the ingredients on hand, I used whole wheat flour, 1 % milk and a 8 by 11 pan. I only baked it 30 minutes but it came out very dry. I'd give it 3 stars for the way I made it. I think I should have cut down the baking time since I used a larger pan. It tasted yummy though and if I microwaved individual pieces before serving it helped to soften it up. Next time I'm going to try it in a cupcake pan (so my 4 year old will at least try it!) use buttermilk, and cut down the baking time. UPDATE: Still didn't have buttermilk but used a tablespoon of lemon juice as others suggested, used half whole wheat and half regular flour and made in cupcake pan. I cooked them for about 15 minutes and they turned out great. My picky boys still prefer the texture of Marie Callendars cornbread mix, but I think these are much tastier!

Brown Sugar Meatloaf

Hubby and I are not big meatloaf eaters, but thought I'd give it a shot. It was pretty good! I made some modifications based on other users' reviews. 1. Used ground chicken. 2. Chopped a little yellow bell pepper and sauteed it with the onions before adding to the mix. 3. Added about 1/4 cup of packed brown sugar and 1/4 cup ketchup into the mix. 4. Increased cracker crumbs to 1 cup. Everything else I left the same.

Lemon Butter Cookies

These cookies are yummy. With this frosting they are superb! 1/4 cup butter, 1/4 cup shortening, 2 cups powdered sugar, 1 tbsp milk, 1/2 tsp vanilla. Warm butter to soften then cream together with shortening (I use an organic non-hydrogenated one), slowly add sugar. Then add milk and vanilla and whip (I just use a fork but if you have a nice mixer it would probably be easier).

Spence's Pesto Chicken Pasta

Did everything as stated except added some onion and cooked the chicken for only three minutes or so before adding other ingredients. It was a lot more mellow than I expected. Hubby loved it. A little too greasy/olive oily for me, but I still enjoyed it. I think the parmesan cheese was the star ingredient though as far as flavor is concerned.

Best of Everything Veggie Burgers

First attempt following directions (2 stars): Wow, I'm not sure what was so great about these. Ours were dry on the outside and mush in the middle, so maybe something was lost in the cooking technique, but we followed the directions so I don't know what went wrong! I was hesitant about using as much cumin as it called for but did it anyway. I LOVE cumin, but that's all these tasted like. Really? All those awesome ingredients and all I got to taste was cumin? I think spices and herbs should enhance what's there, not over power it. EDIT (Second attempt - 4 stars): I had some mix leftover because we only made 4 burgers so the next day I added a bunch more bread crumbs, made the patties smaller and thinner and pan fried them. I also used BBQ sauce instead of ketchup on the burger. This way of cooking it up wasn't as healthy but brought the flavor and texture up from a 2 star to a 4 star rating! If you have a small family, cut the recipe in half or be prepared to cook up a lot extra and freeze them for later.

Garlic Parmesan Orzo

This was easy and had a great flavor but it calls for too much butter (I didn't even use the whole amount stated and it was dripping with fat/grease, especially leftover) and way too much garlic. I'd cut both in half next time and it'd probably get 5 stars from me then.

Pineapple Fried Rice II

Chicken Avocado Pizza

As stated = boring! I had to add garlic salt, onion powder and dried basil afterward to give it a little more dimension. Still not great. I'm keeping it as a reference for another meal with which to use leftover chicken, but next time I'm going to find a way to add some real flavor (onions, salsa, cumin or something). I also think this would work best with a really thin crust. I used a thick one and it really took away from any flavor the toppings may have provided. Maybe I'll try tortillas as a crust next time.

Chicken Cacciatore

Um... yum! OK, I admit it, I didn't follow the recipe to the letter. After reading the reviews, I made some modifications. I cubed, floured and seasoned the chicken and browned it a little first then added about 3 cloves of fresh minced garlic for about 30 seconds and then added the rest of the veggies, including chopped mushrooms. I used Italian stewed tomatoes, just a few dashes of the garlic powder since I had fresh garlic in there already, Italian seasoning instead of just oregano, and about 1/2 tsp of sugar to balance the tartness of the tomatoes. Next time, I will cut back on the pepper since I had salted and peppered the chicken and it was plenty spicy. Served it with pasta and freshly grated parmesan cheese. Will definitely make again!

Oven Roasted Red Potatoes and Asparagus

I just sprinkled on herbs instead of putting as much as called for and minced about 4 to 5 garlic cloves (which was plenty). I followed another reviewers advice about 30 minutes for potatoes in the oven followed by 5 minutes covered asparagus and 5 minutes uncovered. I didn't use as much salt as called for and it was still too salty for my tastes. I would cut it down to maybe 1 tsp total or less.

Cheesy Sausage Pasta

Pretty good. Found that this recipe relied too heavily on the parmesan cheese for flavor. My husband doesn't care for it too much so I went lightly on it for his sake and it was bland. I should have added salt to make up for it. I used Italian chicken sausage which I mostly cooked before throwing in the vegetables rather than the other way around. I'd make again with some modifications. Mushrooms would have made this dish better but I forgot to buy some.
