Butternut and Acorn Squash Soup

But I did make some of the changes suggested, decreased butter to 1 Tbsp, increased onion, used a mango curry dip sauce(from Epicure Selections) to add seasoning - 1 Tbsp, decreased the brown sugar and cream cheese, and added fresh grated ginger too. In addition, I only used acorn squash because I didn't have any butternut. I made 1/2 the recipe. Very tasty.

Absolutely Ultimate Potato Soup

Excellent recipe - because I am lazy and didn't want to have to do the puree step I used a potato soup starter (dried seasoning and potatoes) Added fresh parsley and green onions too, as I had them from our garden! Also added carrots, and used light cream. Delicious!

Three Pepper Pasta Salad

I changed mozzerella cheese to asiago to add more flavour, and added some red wine vinegar as well. Used dried basil as I did not have fresh. Used cherry tomatoes instead of chopping up a larger one, makes the salad less juicy. I left out the olives, as my husband is not fond of them. Added some green onions too.

Raspberry Vinaigrette Dressing

I replaced the sugar with seedless raspberry spread, and used olive oil instead of vegetable oil. One of my favourite dressings!

Ranch Dressing with Fresh Herbs

I didn't have buttermilk so I just used sour cream and half and half. Added more pepper and a little more lemon juice as I didn't have cilantro either. Used orange bell pepper instead of red. Used fresh chives instead of onions and shallots. I did not add salt as I added in grated asiago cheese which is usually pretty salty. The fresh chives and parsley gave it a greenish tinge, but it was quite tasty.

Beef Stew VI

Excellent stew. I looked at reviews and I also browned the beef in a flour and pepper spice mixture to begin with. Also added worcestershire sauce, BBQ sauce, extra garlic powder and bay leaves. Finally added parsnip and turnip as my husband doesn't think a stew is as stew without those ingredients. Made dumplings to go on top, and it was even better than my mother-in-law's stew :).

Greek Style Potatoes

I recommend to everyone to read reviews before you begin :) I didn't have enough time to cook these potatoes for 2 hours, so I used only about 1/2 cup of water and a little extra lemon juice and turned the temp up to 400 degrees right away and they were done in 45 min. I just stirred and turned the potatoes every 15 min. They were delicious, another keeper. I think next time I will follow one reviewers advice and partially cook the potatoes first by boiling them in chicken broth and lemon mixuture, then bake the rest of the way in the oven.

Greek Chicken

We loved it, and I didn't have time to let it marinade long in the herb mixture, only about 1/2 hour. Cooked it on our electric grill (the kind that closes and cooks from the top at the same time) so it only took about 10 min (half way through I turned the chicken breasts as one side of the grill always seems to cook at a bit highter temp) And I just used real lemon juice as I didn't have any fresh lemons. Would definitely make this again!

Savory Zucchini Muffins

Made a few changes as suggested in other reviews such as 1/2 white and 1/2 whole wheat flour. Added 1/2 tbsp parmesan garlic dip seasoning from Epicure Selections and substituted 1/4 cup salsa for 1/4 of milk (so used 3/4 cup milk) Added in crushed chilies (about 1/2 tsp). So looking forward to having it with chili tonight.
