Lower Fat Banana Bread II
This banana bread is FANTASTIC! I combined advice from other reviewers, used 1/3 cup light brown sugar and used about 1/6 cup of Splenda. Instead of the applesauce I used Light Greek Yogurt, reduced the 1 Tbs of Vanilla to 1 Tsp, and added cinnamon to taste. I baked the bread on the rack below the middle for 50 minutes and it came out perfectly...very moist. I also made sure when I was combining the dry ingredients with the wet, that I didn't over-mix it.

Classic Peanut Butter Cookies
These turned out AMAZING! I added 1/4 more flour and peanut butter like others suggested, and omitted the salt because I used salted butter instead. I used crunchy peanut butter and added dark chocolate chips, cooked it at 375 for 10 minutes...PERFECTION! I tried them the next day and they were still soft & chewy, not hard at all.

Cheesy Potato and Corn Chowder
This was a phenomenal soup, which hubby and Roomy LOVED. I omitted the onion, celery, and chiles (as hubby doesn't like them), and added some grilled chicken. Also, to cut down on the fat I used half and half. The next time I might add some carrots to make the consistency a bit chunkier, although with the chicken added it made the soup pretty chunky. Will definitely be making this again. :)
