Coconut Curry Fish

I really liked this recipe but as always I tweaked it. Season the fish instead of adding the seasonings to the pan. Added fresh bell pepper slices, cherry tomatoes, and spanish olives. The olives added a the extra salt that was needed. I served it over boiled potatoes and carrots because I don't like fish with rice.

Spinach and Feta Turkey Burgers

I have already rated this recipe 5 stars but after reading some of the poor reviews, I felt compelled to add some suggestions. 1. Do not use the extra lean turkey. The small amount of fat helps to distribute the flavor. 2. Use the frozen spinach and squeeze the excess water out. It does not have to be totally dry. 3. Use bread soaked in milk instead of eggs. 4. Add the zest of a small lemon. It brightens up the flavors. 5. If you want to add a little salt add it after cooking because the feta is salty on its own.

Beef and Rice Stuffed Bell Peppers

This is a great recipe. I used ground turkey and italian turkey sausage instead of beef. The turkey is lower in fat which offsets the addtional cheese that I add.

Grandma's Brisket

This is a simple recipe. The best recipes usually have modest ingredients. I added garlic because everything is better with garlic! I also substituted beer in place of the ginger ale. Then, I served it with rosemary potatoes and braised cabbage.Delicious.
