Baked Vegetables II

Ease of preparation was key here. I had some leftover rotini pasta as a bottom layer with fresh broccoli, thinly sliced carrot, and sliced zucchini and yellow squash. Also added 1 can of diced tomatoes with Basil & Oregano. Topped with some breadcrumbs and cheddar jack/ sharp cheddar mix. Added sauted onions and garlic. Omitted nuts. Can't wait to dig in!

Stuffed Peppers My Way

Very easy vegetarian meal. We doubled it and used leftover rice, red bell peppers, and added garlic with the onions, omitted salt with seasoning (rice was salted). Feta added a delicous warmth. Boyfriend added crispy bacon to 1/2 of the mix. Highly recommend if you live with a meat-eater as is easy to adapt.

Vegan Pancakes

This version of pancake is totally healthy and you really don't miss the eggs. It's especially great with 100% pure maple syrup. Just be sure to watch the pancake to flip when a few bubbles form and edges start to dry. My non-vegan boyfriend really enjoyed them too!

Vegetarian Black Bean Chili

This really is the best veg. chili I've ever made. Making chili is all about cleaning out the fridge, so in true form I added 1 large head of fennel (anise) and 3 med leeks rinsed, halved, and cut 1/2" strips. Also, did not add tomato paste as I find it has bittered my chili before. Just added 1 big jar of tomato sauce and omitted water. Turned out perfect!

Vegan Black Bean Chili

Butternut Vegetable Soup

Excellent recipe! Very easy to alter to suit your tastes and vegetables on hand. I reduced the vegetable oil to just 2T, added 1 1/2 cups mushrooms with the onion and garlic, omitted carrots and kale, and added about 1/2 the amount of beans. Also, for spices, added 3T fresh basil, 1/2 tsp nutmeg, and 1/4 tsp tumeric. Reduced the broth to 6 cups, and added 2 cups water. Also, only used 1/2 tsp salt. Delicious! Will be making this one again! One more tip: As other reviewers recommend, I pierced the squash all over with a fork and roasted it whole for an hour at 400 F.

Bolognese on a Budget

I really enjoyed this. It came together quickly and tasted great! I took the advice of others and added a whole veg bullion cube (1/2 a cube was one serving so I doubled it) and added 2 cloves minced garlic w the lentils. I also added a bay leaf w the tomatoes and some dried basil near the end. I'm vegan and this is a quick recipe I'm adding in regular rotation. My boyfriend (not a vegan) added Italian sausage cooked separately to his. Delish!

Easy Apple Crisp with Honey

Who doesn't love crisp? Followed advice of fellow reviewers and omitted water and added only 1/4 cup honey. Used vegan butter and substituted 1/4 c date sugar for brown sugar. Used macintosh apples and sliced very thin. Also added 1 tbs butter to dot the top of the crisp. Will be making this again!!

Barley and Mushrooms with Beans

We had this with about 1 Tbs Hot Madras Curry Powder and 1/2 tsp Nutmeg. We also used a cup of pearled barley, 1/2 cup Chardonnay, and 4 cups (1 box) vegetable broth. Came out creamy and delicious in about 40 minutes!

Broccoli and Tofu Stir Fry

We used sesame oil, a touch of honey, and white wine instead of sherry. We doubled the recipe to have leftovers ( lunch! ) and served over rice. Really great!!

Grilled Eggplant, Tomato and Goat Cheese

Very tasty. I salted 30 minutes each side, then mariniated in balsamic vinegar (no oil) and basil for another 30 mins. Spread in single layer in baking sheet, topped each slice with tomato, then baked for 375 for 10 mins. Removed from oven, sprinkled crumbled feta on 1/2 the slices (some people eat cheese, some do not), and returned to oven for another 10-12 minutes. Came out perfect. Garnished with salt, pepper, and basil. Served with warm Ciabatta bread. Perfect for summer, easily adaptable for vegans.

Traditional Style Vegan Shepherd's Pie

This is the best way I've found to use up the bounty of winter veggies from our CSA. We have lots of potatoes, and I've been successful in adding all sorts of vegetables (carrots, parsnips, turnips, celery) to the veggie mix. I omit the faux-meat and add mashed beans (white, garbanzo) instead. I also double the spices used. Thanks for a great recipe!

Twisted Green Bean Casserole

Totally amazing! Subbed in Vegan ingredients. Cashew Alfredo sauce instead of Cream of Mushroom soup, and a few dollops of Tofutti sour cream. Topped with organic butter crackers mixed with melted Earth Balance and Daiya shredded cheddar.

Zimbabwean Chicken and Vegetable Soup

I subbed in baked tofu marinated in lemon and a spicy rub (instead of chicken) and collard greens (for the okra). I will definitely be making this again and will look for okra in the frozen veggies aisle. I loved every sweet & spicy bite!
