Gobble Up Granola Snacks

These were very good. I lined my pan with parchment paper and sprayed sandwich bags with pam to uses as "gloves" to crush down the granola mixture. I didn't have a lot of time so I put the granola bars in the freezer to cool down for about 10 minutes before cutting. Instead of raisins I too added 1/2 cup of chocolate chips. This last time I froze the chocolate chips while I was getting the rest of the ingredients together and stired them in just before pressing into the pan.

Brown Sugar Oatmeal Pancakes

These pancakes are soo tasty. The second time I made them I reduced the brown sugar to 1/4 cup and was able to "reuse" the 1/4 cup to measure out dried buttermilk and to pour out my batter onto my griddle. I love not having to wash more dishes.

Easy Granola Bars

Follow the other poster's suggestions and this recipe is a rock star! This is the first granola bar recipe where the end product looks like a commerical granola bar. Thanks for posting!

Roasted Lemon Herb Chicken

I buy whole chickens all of the time mostly to cook and use in casseroles. So this was my first venture into roasting with seasonings. I grew up on bland food it is nice to have some flavor instead of being boring. I used 1/4 cup bottled lemon juice and 1 TBS of Lemon pepper insted of juice of 2 lemons and kepted everything else the same. Very Good. Thanks for posting!

Zucchini Brownies

These brownies are great!! I remember shredding up the zucchini and making the brownies but, when I went to eat them I was like where is the zucchini?? The brownies tasted too good to have a vegetable in them. It is definitely a keeper and a recipe to pass on to many.

Chocolate Covered Easter Eggs

The chocolate version dry I had to add milk to get them in the egg shape. Next time I will start with 1/2 cup cocoa powder and mix in until I get the constistency desired. Instead of the plain portion I added 1 tsp of peppermint extract taste just like peppermint pattie. I think I will halve the recipe next time. It takes a while to make all of the eggs. Also I used a lot of chocolate to cover all of the eggs about 6 cups but, I a novice to making candy. Overall I am really happy with this recipe and will be making them next year.

Cowboy Mashed Potatoes

Wow are these good! Not the same old mashed potatoes at all. What was really great was the fact that I didn't feel that I need to make another side to go with my bbq chicken. I was hoping my dd 2 would eat them but she didn't more for my husband and I. I subsituted 1 can of chopped green chiles for the Japaleno my grocery store's pepper selection was not labeled and I was afraid I might pick out something really hot.

Miniature Cheesecakes

This recipe is great! It opened my eyes to easier cheesecake making. I rarely make cheese cake because of the time, cost and leftovers. I was able to mix up the ingredients before the oven got to temperature. I left out the nutmeg and instead used 1/2 tsp. orange peel and 1/2 tsp. lemon peel. I froze them in the muffin pan overnight and put them in a freezer bag the next day. The day of my party I put chocolate topping on them 3 oz semisweet choc melted, 1 tbs. melted butter, 1 cup powdered sugar, 1/4 cup whipping cream. Mix the chocolate, butter, and sugar in mixing bowl. Slowly beat in whipping cream until you get spreading consistency. I'm going to try using some of my favorite cheesecake recipes and cook them in the muffin pan with different cookies (Oreos & thin mint). I used both mini vanilla wafers and regular sized vanilla wafers (in their respective pans).

Heavenly Potatoes and Ham

It's like someone made cheesy potatoes and added ham to it to make it a maindish. I didn't pay attention to the recipe before making it and was shocked to see how much butter and sour cream the recipe called for. Although,I really enjoyed the tip on boiling the potatoes to cut down on the baking time.

I bought the most inexpensive gloves I could find. I didn't realize how short they would be so instead of one giant arm I had two hands. I served this at my MOMS Club Halloween Party and everyone thought it was very festive.

Jacky's Fruit and Yogurt Muffins

My daughter is a blueberry fanatic. She loves this recipe. I suggest adding a tsp or 2 of milk to get all of the dry ingredients incorporated. Also, I found that I get about a dozen in a half muffins when I make them.
