Bread Machine Rolls

Grr....followed the directions to a tee. DO NOT COVER WITH A CLOTH for the second rise. The dough gets all stuck to the cloth, and the rolls fall when the cloth gets peeled off. Haven't tasted them yet, but they look horrible! Next time i'll use greased plastic wrap like I usually do.

Whoopie Pies

Cauliflower Cheese Pie

I made this for dinner last night, and it was OK. I did 1.5 times the recipe and baked it in a 8x11 glass pan. I also substituted broccoli for the cauliflower because that was what we had. Even at 1.5 times the recipe, this was a light dinner for 5 adults/older kids. Next time I will double the recipe and bake it in a 9x13 dish. The flavor was OK, everyone ate it, but I don't think this will be a favorite in our house. A good change from our usual dinners, but not a keeper.

Mom's Zucchini Bread

Love it! Super easy, freezes well. I made 5 batches of this in the last three weeks, and my freezer is stocked. Great with choclate chips, too. Also, I tried it with apple in place of the zucchini and it was awesome. I added some extra spices (nutmeg, cloves, allspice), 3+ cups of grated apples, 1/4 cup each of flax seed and wheat germ to up the nutrition, and then baked it in muffin tins for 35 minutes. Yum!

Marinade for Chicken

YUM! Made the marinade this afternoon (half the recipe) and threw in a clove of crushed garlic. Poured it over some chicken tenderloins, let it sit for a few hours, then grilled. Came out moist, flavorful, and delicious. I'll definetly make this again. Better tasting and much cheaper than grocery store marinades.

Apple Turnovers

I made these the other day and froze them. We took two out yesterday morning, popped them in the oven, and enjoyed them (warm!) for breakfast. They were delicious. I love the flaky crust, and the filling was excellent. Tasted store bought. I'm looking forward to being able to eat them fresh all winter long.

Quinoa and Black Beans

Made this last night, and it was great. Followed others' reccomendations and only used one can of beans. I think next time I will make this ahead and serve it cold. It seems like it would be a great summer salad, maybe throw in a diced mango.

Creamy Italian White Bean Soup

Pumpkin Roll III

I made this recipe twice today, and neither turned out. The first one turned into a cracked mess when I went to roll it up in the towel. I thought maybe I overcooked it, or had waited to long to roll it. I tried it again, followed the recipe exactly, and this time the thing fell apart when I went to take it out of the pan. The flavor of the pieces was fine, but it was a mess. I ended up cookie-cutting little circles and filling them with the frosting, kind of like little whoopie pies. Although i'm sure this would end up tasting great, I will not be making this recipe again.

Chewy Chocolate Peanut Butter Chip Cookies

I made this last night, but replaced the peanut butter chips (which I usually don't like anyway - not peanut buttery enough) with a large bag of Reese's Pieces. I put half the Resse's (a little over a cup) into the batter, and used the other half to press 4 or 5 into the top of each cookie just before baking them. They came out great. Also, the batter seemed kind of thin to me, so I followed some other suggestions and added extra flour (about 1/2 cup) and some extra cocoa to stiffen it up. Worked great.
