All-Day Apple Butter

Yum! I can't believe how much over 5lbs of apples can cook down. I only used 2 c of sugar and it is plenty sweet. It's great that this takes all day to cook because it makes the house smell great.

Old Fashioned Potato Salad

Love it!! Just what I think of when I think "traditional" potato salad. I think you HAVE to use the sweet pickle relish. My only complaint is - how much is "5 potatoes"? I prefer a weight - I think I used about half of a 5 lb bag of red potatoes and upped the dressing a bit. Also, a good think to remember is to cut your potatoes up BEFORE you cook them if they are not pretty uniform in size. Two of mine were a good bit bigger than the others and they ended up rather al dente (not what I want in my potato salad!)

Speedy Ice Cream

I give this 5 stars for it being so simple, unusual and great for kids to participate in. It works but the ice cream melts pretty fast and the consistency is pretty soft but it tastes like ice cream and my 3 yr old loved it from start to finish.

Five Minute Ice Cream

We usually make our smoothies with frozen fruit and some fruit juice so this was an easy switch - just use cream instead of the fruit juce. Not quite as healthy but it surrrre is tasty!

Ambrosia Salad

I love this stuff!!! I use 2 cups of mini marshmallows (the multi-colored version) and only 3/4 c of sour cream. I think using sour cream is so much better than the Cool Whip that other Ambrosia Salads call for. It's just too artificial for my liking. Make sure the salad is nice and cold before serving.

MMMMM... Brownies

WOW. These are great - fudgey, chocolately - everything I want in a brownie. This will be my new brownie recipe and it's so easy too! By the way 1 1/2 c of chocolate chips is equal to a 9 oz bag.

Sam's Famous Carrot Cake

This recipe was definitely 5 star AFTER sitting for a day. I served it the day I made it and while it was good, it tasted like it was missing "something". This recipe made 24 cupcakes and I baked them for 30 minutes. I'll absolutely make it again, but I'll prepare it (and frost it) the day before I need it.

Delicious Black Bean Burritos

I'm giving this 3 stars because as written I think the recipe is a little bland and the cream cheese is way too heavy. I added a dozen shakes of cayenne pepper which gave it some zip, but I could hardly eat 1/2 a burrito because it was just too creamy and cheesy tasting. I might make these again and add additional ingredients to try and even out the heaviness of the cheese and also add some additional flavor.

Apple Spice Rice

I served this with a seafood birthday dinner and I felt like it was a bit of a let down. It tasted good, but it's nothing special. It also looks completely boring once cooked - the apples fade and the raisins are pale. It needs more color.

Graham Crackers

These are terrific! My toddler loves crackers and I wanted to find something that would be more healthy than whole wheat Ritz. These fit the bill - I substituted 1/2 c flax seed (next time I'll grind it) and 1/2 c of oat bran for 1 c of the whole wheat flour and upped the milk to 1/2 c based on others' suggestions. I used my silicone (Silpat) baking mats and rolled the dough right on it as thin as I could. I cut the dough into little rectangles w/ a pizza cutter and sprinkled cinnamon sugar (1 T sugar + 1/2 t cinnamon) over them. After they had cooled I broke the crackers apart along the lines I made w/ the pizza cutter, which worked great. The crackers that came out soft I put back in the oven (after I had turned it off) and left them overnight. This morning they were all wonderfully crispy! Next time I think I will cut back a little on the brown sugar, especially if I use the cinnamon/sugar topping again. I'm so glad I found these!!

Hummus III

Nice base - I think I'll tinker with it next time. My only complaint is it was really thick (I even added some of the liquid from the drained beans) and became thicker after sitting overnight in the fridge. Oh, I also agree thatn 1/3 c tahini is too much - it definitely makes the hummus bitter. Also, I had a hard time getting this creamy - it has a grainy feel to it. UPDATE: I made this again and used a blender (not a Magic Bullet) and was able to get it creamy smooth. Yay!

Jumbo Banana Cookies

These are moist, cakey cookies that definitely taste better the next day. I wouldn't omit the frosting either especially since I think the frosting helps keep them moist. I can't give 5 stars though since without my additional of 6 oz of chocolate chips I think these would have been a bit bland.

Apple Butter I

Very good! My husband tasted it with a little hesitation but then went right back for more saying "this really DOES taste just like what I had as a kid!". I can't give this 4 stars because the recipe was vague on the amount/type of apples - "8 apples" leaves a ton of room for interpretation! I used a 3lb bag of Pinata apples (they taste like Honey Crisps) which was 10 small apples. I also reduced the sugar by half and it was still plenty sweet. I let it cook overnight and it worked great! I also like the idea of stirring it with a wire whisk to get the last chunks broken up vs putting it in a blender. A lot less messy.

Peanut Butter Eggs

This are quite good - could be a little more "peanutty" tasting and I even used chunky peanut butter! The dough is super easy to work with and a good one to let your 3 yr old help you out with. The only changes I would make is halve the recipe next time - I had about 8 dozen small eggs, which eventually turned into small balls about 1" in diameter because I just wanted to get done! In order to get the 66 pieces that the recipe indicates you would have to make pretty large egg shapes which I think would be way too rich. Also, I made 3/4 of the amount of melted chocolate for dipping and still had some leftover. Oh, and like other reviewers we omitted the coconut - didn't sound like it would go well with the peanut butter filling.

Churros

These are so easy and delicious! I have a suggestion for those that had trouble with the pastry bag - use a cookie press! Mine comes with icing tips too, so I used the largest star tip and just squeezed the handle three or four times (holding it in the air) until it was the right length, then broke off the dough and laid it in the oil. It worked wonderfully and was easy on my hand (this dough is very firm so I can see how twisting a pastry bag would get tiring). The only downside is my churros were a little on the skinny side b/c my star tip wasn't as big as I would have liked but they were polished off in no time and tasted great!

Cake Mix Cookies IV

I was looking for something that would taste like the "Lofthouse Cookies" that you buy at the grocery store (someone said this would work). These were very easy and tasty, but did not taste like the Lofthouse Cookies which are more cakey. I used 1/3 c Crisco instead of vegetable oil. I tried mixing everything with a wooden spoon, but it was a lot easier once I threw it all in the mixer. I was able to get 2 dozen cookies from this recipe.

Irish Soda Bread

This is so good and really easy. My 3 yr old daughter got a kick out of helping me and it was a good recipe (forgiving!) for her to participate in. I used a cast iron skillet to bake the bread in which gave it a wonderful brown crust that only baking in cast iron can do! I just wish it was a tad bit sweeter.

Penne a la Vodka II

Yum! I love pasta with tomato vodka sauce at restaurants and was hoping to find something that was similiar that I could make at home. This was super easy and pretty good - I think it could be a bit more flavorful, but still thought it worthy of 4 stars. I sauted some shrimp with the garlic and tomatoes, set them aside when they were done and then put them back in just before serving so they didn't get overcooked. I also added peas to the sauce. A very nice Valentine's Day meal!
