My Amish Friend's Caramel Corn

OMG - the 5 stars isn't an exaggeration! This was crispy, light and delicious. My air popper uses a 1/2 c measure which gave me 12 c of popped corn so two rounds of that gave me just about 7 qts (28 c). I used a friend's suggestion to put the popped corn in a large paper grocery bag and shake it with the brown sugar mixture. It worked wonderfully and there was essentially no clean up. Also, I used my son's "milk free" (Earth Balance) butter substitute with great results.

Potato Latkes I

Becky's Oatmeal Carmelitas

I let these cool over night to avoid the excessive crumbling/mushiness others complained about. Just cut into them this morning and the bottom layer is nice and firm. I used 3 -4 Tblspns of 1% milk as I found out last minute that my evaporated milk had spoiled. I think they'll be a hit!

Strawberry Trifle

I also used real whipping cream and substituted yogurt for the pudding (1/2 of each). It gave it a lightness and tang that was delicious. Everyone loved it.

Best Spaghetti Sauce in the World

Best Chocolate Chip Cookies

Yum!! I accidently put in 1 tsp of salt instead of a 1/2 t but they are still great. My only complaint is they flattened out a lot so next time I'll chill the dough for a bit.

Spicy-Sweet Glazed Salmon

Oh.My.Gosh. This was delicious!! I love the idea of cooking down the marinade to make a dipping sauce - it was wonderful. I didn't have cilantro so I left that out. I also left the skin on the salmon and marinaded it skin side up. Absolutely a keeper.

Potato and Bacon Salad

I made this last night so the flavors could blend which I'm glad I did but I still can't taste any bacon flavor. I think I'm going to add some more as garnish before serving. I also cut up the red potatoes before boiling (with skins on) and it worked out nicely.

Todd's Famous Blueberry Pancakes

Everyone loved these. I mixed up the batter, showered, dressed and came back 30 minutes later. I could see bubbles so the baking powder was doing its thing and I went ahead and cooked them. They puffed up nicely so I'm not sure the batter needs a whole hour to rest.

Clone of a Cinnabon

This are wonderful! My family said 5 stars were not enough. I even made them allergy friendly for my milk allergic son and used Rice Milk and Earth Balance instead of butter and milk and it still turned out delicious. I made the dough in the bread machine last night, put it in the fridge after the dough cycle was done and then did the rest of the prep this morning for fresh warm rolls out of the oven for Father's Day.

Chicken Stew with Dumplings

Yum! Made as written but I added 1 additional cup of water. Still needed more broth so will add 2c next time and omit the potatoes just b/c the dumplings are enough carbs.

Very good and certainly a quick dinner. I used a bag of shredded cabbage for cole slaw and omitted the chicken. It was still hearty and we didn't miss the chicken

Spicy Fisherman's Pie

Yum!! This was delicious! I can't give it 5 stars though b/c without adjusting the seasonings it would be pretty bland. I seasoned the fish w/ salt and pepper and increased the chili pwdr to 1/2 t and it still needed additional salt and pepper after it came out of the oven. I also added about 3/4 c of frozen peas and doubled the carrots. Took others' advice on the potatoes (used 2 lbs) and only 4 oz of cheese. This will definitely be going into our dinner rotation.

Popcorn Cake II

Delicious! It tastes just like a popcorn ball without having to go through the hassle of cooking a syrup, using a candy thermometer, etc. I used my air popper and used the required 1/2 c scooper to measure the kernels. That yielded 14 c of popped corn, so about 1 1/4 batches made enough popped corn.

Pancake and Sausage Casserole

Yum! We used 1 package of Jimmy Dean's Sage Sausage and it was enough for us. Definitely need to use a jelly roll pan and spread the batter to the edges for uniform thickness. I didn't do that and the middle was bordering on too thick while the edges were a nice thickness. Will freeze the remaining squares for a quick breakfast option during the week.
