Popcorn Cake II

Delicious! It tastes just like a popcorn ball without having to go through the hassle of cooking a syrup, using a candy thermometer, etc. I used my air popper and used the required 1/2 c scooper to measure the kernels. That yielded 14 c of popped corn, so about 1 1/4 batches made enough popped corn.

Pancake and Sausage Casserole

Yum! We used 1 package of Jimmy Dean's Sage Sausage and it was enough for us. Definitely need to use a jelly roll pan and spread the batter to the edges for uniform thickness. I didn't do that and the middle was bordering on too thick while the edges were a nice thickness. Will freeze the remaining squares for a quick breakfast option during the week.

Buttercream Frosting

Yum! I'm used Earth Balance for the butter due to my milk allergic son; it turned out nicely so I'm really looking forward to using real butter next time.

Ricotta Gnocchi

Delicious! Everyone enjoyed it and I will definitely be making it again. I used home canned tomatoes from last summer and the sauce was nice and bright tasting. I did forget to let the ricotta drain so next time I'll be sure to do that.

Fresh Tomato Shrimp Pasta

Very good but the fresh mozzarella just melted into globs. Next time I'll omit and instead sprinkle fresh grated Parmesean before serving.

Calzone

Yum! Made the dough in the bread machine and split it into two calzones; one with mozzarella and pepperoni the other with spinach, mushroom and mozzarella. I popped the veggies in the micro for 1 minute to soften them up. Delicious.

French Toast Casserole

Delicious and yes, they taste very much like the store bought version. I have allowed these to sit in a covered tin for a few weeks and I think they taste better the longer they are allowed to sit.

I'm glad I tried these but I don't think I'd make them again. They were dense and somewhat flavorless as written. I cooked on medium-high heat and even spread the batter out so they would cook through and not burn. My additional suggestions would be to double the cinnamon and add a pinch of salt.

Pumpkin Pancakes

No allspice on hand so I substituted 1/2 t clove, 1/4 t nutmeg and an extra 1/4 t cinnamon for the allspice. Added some mini semi-sweet chips too.

Cranberry Zucchini Bread

Nice flavor and I liked the tanginess that the cranberries (craisins soaked in hot water) brought. I used 1c whole wheat flour for the white and I thought the nuttiness it brought to the bread complimented the flavors. I subtituted 1/2 c applesauce for 1/2 c of the oil and last, cut the sugar in half. The sweetness of the applesauce and craisins added plenty.

Slow Cooker Beef and Mushroom Stew

This turned out great! Another one that the kids and hubby raved about. I used 16 oz of beef boullion and a sliced onion instead of the Campbell's soup. I had fresh green beans to use up and threw those in during the last 30 minutes of cooking. I let it cook for 10 hours while I was at work and it turned out perfect!

Awesome Chicken Noodle Soup

When your kids keep saying "this soup is good!" and "I love this soup Mommy" you have to give the recipe 5 stars. I used a low sodium version of "Better Than Boullion" and 3lbs of chicken breasts (on the bone and with the skin). I opted to cook my noodles separately so I didn't soak up too much of the broth. This is a keeper, no doubt about it.

Grandma's Sloppy Joes

Good! The mustard flavor was a little strong but the 2nd day it mellowed. Next time I may reduce to 1 1/2 T instead. Also reduced cloves to 1/4 t as others suggested. I had really no liquid for the mixture to simmer in so I added about 2 T of water.

Chocolate Zucchini Muffins

Nice, subtle chocolate taste and not too sweet. However, I used 1/2c oil and 2 mashed bananas (no applesauce on hand), half the sugar, and 1/2 t cinnamon since I had no cardamon.

Oatmeal Raisin Cookies I

A little bit sweet but I was able to successfully use Earth Balance in lieu of butter (for my milk allergic son) by scooping out the dough into balls, placing them on a cookie sheet, allowing them to freeze and them baking them. It kept them from spreading out as badly as they did when I scooped the dough straight from the mixing bowl.
