Honey Beet Salad

I LOVE pickled beets and this tastes just like them! I could have eaten the whole bowl by myself. I didn't even include the walnuts, onion or parsley and they were still that delicious. I used my pressure cooker which cooked the beets in 15 minutes vs 1 hour in the oven.

Chicken and Corn Chili

The flavors were nice and I love that it was simple with non-processed ingredients but as written it was a thick filling and not like any chili I've had. In order to try and remedy this I added a 15 oz can of Rotel diced tomatoes with green chilis and 32 oz chicken broth. I let it sit overnight to blend the flavors and it was good. Still had some zing to it (I had used a jar of Frontera Grill salsa) but kind of felt like Tortilla soup without the tortillas.

Crunchy Eggplant Parmesan

My husband loved this. I thought it was a LOT of work and I'm not sure if I'd do it again. The eggplant was nice and crunchy until it was cooked with the sauce, then the crunch was gone. Nice flavor but again, not sure if it was worth all the extra effort.

Chocolate Oatmeal Cookies

First I made a single batch and baked as cookies; they were good, but a little dry. They didn't spread hardly at all. The next day I made a double batch of dough and baked in a greased 13x9 pan for 25 - 30 minutes. These turned out more moist and chewy; I think these are better as bars.

Perfect Coconut Macaroons

Delicious! I don't have a blender so I ran about half the coconut mixture through my Magic Bullet break it down. Added the extracts to the egg whites while I whipped them. Got 24 macaroons from 1 batch and ate them too fast to dip them in chocolate!

White Bean Chicken Chili

Hubby gave this 5 stars and would have given it more if he could have. We shredded the chicken breast and as others suggested used a good salsa verde instead of tomatillos. I let it simmer for a while with the cover off and it thickened up nicely. Didn't have coriander seed so used ground fennel.

No-Bake Chocolate Coconut Cookies

Delicious and super easy. My mother used to make these with peanut butter instead of the coconut but these are nice for my nut-allergic son. I used 1 1/2 c of sugar instead of 2c and they were still plenty sweet.

Homemade Refrigerator Pickles

Reduced the sugar by half and added 2 T of McCormick's pickling spice to the vinegar/sugar mixture. Big hit with my husband and my 6 yr old.

Bolognese Sauce

Yum! My husband can't stop raving about this sauce. The only changes I made was to use plum tomatoes from the garden instead of canned, omitted the pork and used 1/2 the ground beef. Just enough meat to add substance and extra flavor. Doubled the recipe and froze a few quarts for later.

Banana Chocolate Chip Cookies

Opted to make these into bars - spread the batter in a greased 13 x 9 pan and baked at 375 for 35 minutes. Turned out great! As others suggested I reduced the baking powder to 1 tsp and 1 c of rough chopped bittersweet baking chocolate. Next time I'd like to toss in some coconut too.

Brown Sugar Bacon Waffles

I used more bacon - maybe 16 slices - and I got 10 1/2 Belgian-sized waffles out of the batch by using a 1/2 c measuring cup to pour out the batter.

Country House Bed and Breakfast Casserole

I doubled the recipe and used a 13 x 9 pan. The end result was very thin and not fluffy at all, but it did taste good. Since it was so flat I used it to make breakfast sandwiches on toasted bagels the next day.

Spicy Hot Chicken Legs

Good but nothing special. We ended up with a pool of hot sauce "gravy" that I guess I should have used to baste the chicken legs during the last hour or so. It was good over rice.

Mom's Applesauce Pancakes

I used Aunt Jemima's Whole Wheat Blend - the batter was quite thick and didn't spread out much but the panckes were fluffy and not dense. We all liked them and will add these to our pancake rotation.

Date Oat Muffins

I added the zest of one orange and love the results! If that had been an ingredient in the original recipe I would have given this 5 stars. I was very pleased with the moisture level - it may have been due to my modifications: I used canola oil instead of butter and used one whole egg instead of two egg whites.

Overnight Eggnog French Toast

I liked the carmelization of the sugar on the bottom but overall this was too sweet. We put unsweetened applesauce on top which helped cut the sweetness a lot. I used 6 dinner-sized challah rolls split in half for the bread which worked out nicely. I'm glad I tried this but unlikely I'd make it again
