Quinoa and Black Beans

The whole family loved this. I used chicken broth in lieu of veggie broth. I think it would make a nice burrito filling with some cheese or sour cream.

Vegetable Medley I

Yum! Simple to make on the stove top - I just put it under the broiler to melt the parmesan. I didn't have any tomatoes so I used a bit of spaghetti sauce to pull it all together, which worked great. Also added mushrooms.

Molten Chocolate Cakes With Sugar-Coated Raspberries

Based on the title I was expecting a liquidy chocolate filling to ooze out when we cut into them. These were just mini-souffles, which were nice but not "molten" chocolate cakes. The sugared raspberries were a hit though!

Overnight Blueberry French Toast

My 10 year old daughter made this with a little supervision. We used vienna bread (like french bread) with good results. It puffed up beautifully after we removed the foil! I would use only 8 oz of cream cheese next time and cut it into smaller cubes, maybe 1/2" instead of 1". Served the blueberry sauce on the side.

French Onion Dip From Scratch

This was very good but as written the taste of mayo was too strong for our tastes. Next time I will use 1/2 the mayo and increase the sour cream accordingly.

French Onion Soup Gratinee

This was delicious! My hubby gave it 4 3/4 stars b/c I didn't have red wine and just added additional broth. I used 1/2 t ground thyme in lieu of fresh. The soup was on the sweet side (and I used a combination of red and yellow onion - no sweet onion) but I thought it was delicious, rich and warm. So glad I tried this! P.S. I just realized I forgot the salt when carmelizing the onions - maybe the lack of salt contributed to the overall sweetness? Next time I'll remember that and also use red wine.

Pretzel Turtles®

I use Rolo candies and Snyder pretzel "snaps" (the small square grids). To make them nut-free we pressed a second pretzel on top once the candies were soft - sort of a pretzel sandwich. Delicious! Also mine were soft at 3 minutes but the chocolate was not drippy, which was good.

Candied Carrots

Super easy and delicious. I only used 2T of brown sugar and it was plenty sweet. Cooked the carrots in the pressure cooker - only took 1 minute.

The Best Meatloaf I've Ever Made

Nice meatloaf - tastes like what I'd expect from Mom I used 85/15 ground beef; I knew there would be grease to drain so I formed a loaf and used an 11 x 9 pan instead of a loaf pan.

Slow Cooker Chicken Taco Soup

Delicious! I used a bottle of Brown Dog Ale and it made all the difference in flavor. I know nothing about beer, so this is just what I could find at Whole Foods as a single bottle, but it worked great. Used the Taco Seasoning recipe from Allrecipes too (haven't used anything else in years!). Will definitely make this again.

White Chili with Ground Turkey

A 1 lb bag of dried beans yields 34 oz but just over 3 "cans" worth of beans in volume. I only had a 1 lb package of ground turkey so I threw in a can of mixed chili beans (which is why I had an empty can to measure the white beans) to make up the difference in volume. I used 4 c of low sodium chicken stock, 1/2 t of cinnamon and 1/8 t each of the white pepper and cayenne. I also drained the canned chilis for fear of having too much liquid as others complained.

Mrs. Sigg's Snickerdoodles

Just made these - used all butter, did let the dough chill for about 30 minutes prior to rolling into balls. I put the cinnamon/sugar into a small bowl and just rolled the dough ball around until it was coated - worked great. Once the cookies bake and spread (and they will spread!) the coating will not be so dense, so don't worry if it seems heavy-handed. I used my Silpat baking mats, let the cookies bake for 10 min until set (but not wet looking in the center) then brought them out and let the cookies sit for about 5 minutes on the baking sheets. They came right off the Silpats without sticking (once they had cooled a bit) and I put them on cooling racks. For a few cookies I substituted Pumpkin Pie spice for the cinnamon - haven't tried them yet but couldn't resist a fall twist on these yummy cookies. Oh and I was careful not to overmix once I added the dry ingredients. My cookies puffed up nicely.

My Navy Bean Soup

I soaked the beans overnight and put them in the crockpot today on high until it was bubbling and then turned down to low until the beans were cooked. Sauteed the veggies in olive oil and used 1 qt of Trader Joe's low sodium organic vegetable broth and 3 c of chicken stock - I was worried about the other reviews mentioning the saltiness and the veggie broth was all I had that was low sodium. I'm glad I did - we really liked the added flavors from the veggie broth (including tomato). I cubed a 1lb ham steak instead of bacon. When the beans were tender I took out 2 c of the soup, pureed and added back to thicken the soup (I pulled out the ham cubes so they didn't get pureed). I also let it cook without the top on for about 45 min to thicken as well. UPDATE 3/22/15 - added a bay leaf, used 1 qt low sodium veggie stock and 1 qt LS chicken stock. Still delicious.

Spinach Enchiladas Verde

This was DELICIOUS!!! I ended up layering it like a lasagna vs rolling the 12 corn tortillas since they are famously difficult to work with. I left the spinach whole (16oz bag), used 1 c greek yogurt instead of sr cream and used Frontera Grills's tomatillo salsa which was nice and spicy. I'm only giving it 4 stars though because I was confused about the directions "stir together half of the sour cream and the green salsa." - but I didn't see where I was supposed to use the rest of the sour cream so I used a good 12 oz of the 16 oz of salsa with the full 8 oz of sour cream and poured the rest of the salsa (straight) on the bottom of the bottom before layering the tortillas.

Grill Dough

This works great on the grill. We cook it on the first side for a few minutes and then flip it, add toppings and then grill again. I also made the dough in my bread machine - super easy.
