Brown Sugar Bacon Waffles

I used more bacon - maybe 16 slices - and I got 10 1/2 Belgian-sized waffles out of the batch by using a 1/2 c measuring cup to pour out the batter.

Country House Bed and Breakfast Casserole

I doubled the recipe and used a 13 x 9 pan. The end result was very thin and not fluffy at all, but it did taste good. Since it was so flat I used it to make breakfast sandwiches on toasted bagels the next day.

Spicy Hot Chicken Legs

Good but nothing special. We ended up with a pool of hot sauce "gravy" that I guess I should have used to baste the chicken legs during the last hour or so. It was good over rice.

Mom's Applesauce Pancakes

I used Aunt Jemima's Whole Wheat Blend - the batter was quite thick and didn't spread out much but the panckes were fluffy and not dense. We all liked them and will add these to our pancake rotation.

Date Oat Muffins

I added the zest of one orange and love the results! If that had been an ingredient in the original recipe I would have given this 5 stars. I was very pleased with the moisture level - it may have been due to my modifications: I used canola oil instead of butter and used one whole egg instead of two egg whites.

Overnight Eggnog French Toast

I liked the carmelization of the sugar on the bottom but overall this was too sweet. We put unsweetened applesauce on top which helped cut the sweetness a lot. I used 6 dinner-sized challah rolls split in half for the bread which worked out nicely. I'm glad I tried this but unlikely I'd make it again

Baked Oatmeal II

Unanimous 5 stars - hubby and my 6 and 8 yr olds. I reduced the sugar and used applesauce in lieu of the melted butter. Super easy and very good.

Singaporean Chile Crab

Yes, this is very messy and yes it is delicious and spicy! We used 1 jalapeno instead of the chilis and that was hot enough for us. We accidentlyused lime instead of lemon juice but I think it was a happy accident. Excellent dish that we will make again.

Nice! I didn't have heavy cream so I used all buttercream frosting which made it a little heavy. I made sure to beat the egg yolks until pale which was 5 minutes. Next time I'll spray the parchment with cooking spray as the cake did stick a bit.

Italian Spaghetti Sauce with Meatballs

Made this with 32 oz of fresh garden tomatoes and a 28 oz can of whole tomatoes. Blanched and skinned the fresh tomatoes and used a stick blender to combine until 75% smooth. I added a green pepper and 8oz of sliced mushrooms since I omitted the meat balls; it gave the sauce some extra body. The only mistake I made was adding the full 2 t of salt while cooking instead of waiting until the sauce was done and adding to taste. It does taste a bit on the salty side right now.

Fluffy Pancakes

Wow, could these get any easier and any tastier? To accomodate a milk allergy I added the vinegar to rice milk with no problem and used canola oil in place of the melted butter. My 5 yr old son has asked if we can have these for lunch today too.

Kiki's Borracho (Drunken) Beans

We really enjoyed the flavor of these beans but I had a tough time getting them to cook (after soaking overnight we put them in the crockpot on "high"), hence the 4 stars and not 5. Now I'm wondering if it took forever b/c my beans were "old"? We used 1 whole fresh jalapeno instead of pickled.

Beef Barley Vegetable Soup

Love! We used 4c of beef broth to cook the roast. Instead of frozen mixed veggies we added 8 oz each of frozen corn and peas. As another reviewer suggested we added a dash of Worcestershire instead of sugar. We also upped the barley to 3/4c. After letting it sit/cool overnight all the liquid was absorbed so we added 6c more beef broth before eating it today. It was OUTSTANDING!

Pumpkin Date Bread

Delicious! It's just out of the oven now, so it will probably taste even better when its completely cooled. I used 1 1/2 c of sugar instead of the full 2c and I substituted 1 1/3 c of whole wheat flour for the equivalent amount of white. The cinnamon/brown sugar topping is very nice as it adds a little crunch and touch of sweetness.

LOVE! I doubled the sauce (but only used 1/2c of sugar) and then poured 2/3 of that into a separate bowl for basting. The rest I served tableside for dipping. My 5 yr old couldn't stop telling me how good the sauce was!

Pierogi (Polish Dumplings)

Love these. They remind me of holidays with my Polish relatives and I've started my own tradition by making them for Easter the last two years. Both fillings are delicious. We boil and then fry them for some extra yummy flavor and crunch. I used a pint-sized drinking class to cut out the dough - it was just about 3" across.

Bread Machine Swedish Coffee Bread

Love, love, love! I misplaced my original recipe that I cut out of the Chicago Tribune about 15 yrs ago. Thank goodness I found this version - I loved being able to put everything in the bread machine and only having to do the braiding and second rising. I also didn't have ground cardamon on hand but had 6 - 8 cardamon pods which I ground fresh. It yielded about 1 tsp vs the 3 tsp the recipe called for but it was very potent thanks to the fresh grinding; the cardamon flavor came through loud and clear. The old recipe also made 3 loaves so it's nice to be able to just make one at a time with this one.

Tangy Grilled Pork Tenderloin

Absolutely delicious! I used a full 1 t of chili powder and it was just nicely seasoned, not spicy. We boiled and reduced the marinade to use as a dipping sauce. Also let it marinate overnight. The meat was wonderfully tender.
