Roasted Acorn Squash Soup

Nice and silky and easy to make but it's a SWEET soup. I used my immersion blender which made blending the soup in the pot super easy.

White Chili with Ground Turkey

A 1 lb bag of dried beans yields 34 oz but just over 3 "cans" worth of beans in volume. I only had a 1 lb package of ground turkey so I threw in a can of mixed chili beans (which is why I had an empty can to measure the white beans) to make up the difference in volume. I used 4 c of low sodium chicken stock, 1/2 t of cinnamon and 1/8 t each of the white pepper and cayenne. I also drained the canned chilis for fear of having too much liquid as others complained.

Mrs. Sigg's Snickerdoodles

Just made these - used all butter, did let the dough chill for about 30 minutes prior to rolling into balls. I put the cinnamon/sugar into a small bowl and just rolled the dough ball around until it was coated - worked great. Once the cookies bake and spread (and they will spread!) the coating will not be so dense, so don't worry if it seems heavy-handed. I used my Silpat baking mats, let the cookies bake for 10 min until set (but not wet looking in the center) then brought them out and let the cookies sit for about 5 minutes on the baking sheets. They came right off the Silpats without sticking (once they had cooled a bit) and I put them on cooling racks. For a few cookies I substituted Pumpkin Pie spice for the cinnamon - haven't tried them yet but couldn't resist a fall twist on these yummy cookies. Oh and I was careful not to overmix once I added the dry ingredients. My cookies puffed up nicely.

My Navy Bean Soup

I soaked the beans overnight and put them in the crockpot today on high until it was bubbling and then turned down to low until the beans were cooked. Sauteed the veggies in olive oil and used 1 qt of Trader Joe's low sodium organic vegetable broth and 3 c of chicken stock - I was worried about the other reviews mentioning the saltiness and the veggie broth was all I had that was low sodium. I'm glad I did - we really liked the added flavors from the veggie broth (including tomato). I cubed a 1lb ham steak instead of bacon. When the beans were tender I took out 2 c of the soup, pureed and added back to thicken the soup (I pulled out the ham cubes so they didn't get pureed). I also let it cook without the top on for about 45 min to thicken as well.

Spinach Enchiladas Verde

This was DELICIOUS!!! I ended up layering it like a lasagna vs rolling the 12 corn tortillas since they are famously difficult to work with. Used Frontera Grills's tomatillo salsa which was nice and spicy. I'm only giving it 4 stars though because I was confused about the directions "stir together half of the sour cream and the green salsa." - but I didn't see where I was supposed to use the rest of the sour cream so I used a good 12 oz of the 16 oz of salsa with the full 8 oz of sour cream and poured the rest of the salsa (straight) on the bottom of the bottom before layering the tortillas.

Grill Dough

This works great on the grill. We cook it on the first side for a few minutes and then flip it, add toppings and then grill again. I also made the dough in my bread machine - super easy.

Wow, it doesn't get any easier than this. I didn't even add sugar, just apples we picked from the orchard last weekend and the cinnamon and water. It was so delicious - it was ridiculous!

Potato Skins

Yum! Used the insides to make Baked Potato soup and the shells/skins for this recipe. Happy not to have the deep fry the skins as I saw in another recipe. They were crispy on the outside, chewy inside. I used crumbled up bacon and cheddar cheese with a dollop of sour cream. Perfect.

Homemade Mac and Cheese

We used a combo of colby jack, mozzarella and american with rigatoni noodles just because that's what we had and it worked great. Toasted panko bread crumbs on top - everyone enjoyed it. I was worried it was too liquidy but read the review assuring that it wouldn't be that way after it baked and she was right!

Banana Banana Bread

Delicious! I used 1/2 c brown sugar and 1 c of chopped dark chocolate. I noticed there was bubbling liquid along the bottom and sides when I took the bread out to test it at 60 minutes. It took another 15 to finish; the crust tastes carmelized! Maybe that's what the bubbling liquid was doing. The whole family loves it.

Big Soft Ginger Cookies

Very tasty but after 10 min baking they are super soft but the inside seems raw? I tried going 12 min and then they are cooked through but the texture isn't as soft. Maybe 11 min is the key.

Refried Beans Without the Refry

Good and easy. I used a whole jalapeno but removed the seeds and ribs. It gave the beans a nice mild zip. Reduced the salt to 2 tsp since we watch our sodium and it was fine.

Split Pea Soup

Delicious! I made a few mistakes due to flying through the recipe too quickly; I didn't measure out the water but instead just eye-balled it so the peas were covered a few inches. I also accidently put the carrots and celery in at the beginning so they cooked the entire time. The celery and onion were all cooked down but there were still visible bits of carrot. Lastly, I added a few bay leaves in lieu of the marjoram.

Honey Beet Salad

I LOVE pickled beets and this tastes just like them! I could have eaten the whole bowl by myself. I didn't even include the walnuts, onion or parsley and they were still that delicious. I used my pressure cooker which cooked the beets in 15 minutes vs 1 hour in the oven.

Chicken and Corn Chili

The flavors were nice and I love that it was simple with non-processed ingredients but as written it was a thick filling and not like any chili I've had. In order to try and remedy this I added a 15 oz can of Rotel diced tomatoes with green chilis and 32 oz chicken broth. I let it sit overnight to blend the flavors and it was good. Still had some zing to it (I had used a jar of Frontera Grill salsa) but kind of felt like Tortilla soup without the tortillas.

Crunchy Eggplant Parmesan

My husband loved this. I thought it was a LOT of work and I'm not sure if I'd do it again. The eggplant was nice and crunchy until it was cooked with the sauce, then the crunch was gone. Nice flavor but again, not sure if it was worth all the extra effort.

Chocolate Oatmeal Cookies

First I made a single batch and baked as cookies; they were good, but a little dry. They didn't spread hardly at all. The next day I made a double batch of dough and baked in a greased 13x9 pan for 25 - 30 minutes. These turned out more moist and chewy; I think these are better as bars.
