Vegan Brownies

Pretty good...not your typical dense fudge brownie taste, but still delicious. I halved the recipe and baked for 25 min in 8x8 glass pan. I subbed half the oil for applesauce, used half sugar in the raw and half splenda, and used 2 squares of unsweetened chocolate bar. Tastes more like very moist chocolate cake/chocolate bread pudding rather than dense, fudgy brownie, but I am happy!

Roasted Chickpeas

My batch came out half crunchy, half chewy/soggy, so I will try to dry them and use the tips others gave. I loved the crunchy ones. I will try curry powder next time.

Creamy Smoked Salmon Pasta

I used canned salmon since smoked salmon is so expensive, omitted the peas, used fresh mushrooms, and parmesan cheese. I used olive oil to sub 3 tbsp of the butter. It had a nice, light flavor!

Savory Shrimp over Wild Rice

I added more cloves of garlic and threw in some frozen spinach with the tomatoes at the end. i also threw some leftover brown rice in the pan to heat it up, and it soaked up the flavor of the shrimp and garlic well. It was delicious!!!

Fast and Friendly Meatballs

these were so good! i'm trying to be healthy, so made my own breadcrumbs out of whole wheat bread, oregano, basil, garlic powder, chopped onion, and a pinch of parmesan cheese. the meatballs were moist and delicious! One of my favorites now.

Eggplant Parmesan II

this was pretty time consuming and in the end it didn't taste that good. I salted, sweated, and rinsed the eggplant, baked 10 minutes each side, and used really good spaghetti sauce but we didn't like it and ended up eating something else for dinner.

I shredded the chicken and let it simmer in the fajita seasoning with a little bit of water. I sprinkled some Mexican shredded cheese on top and added avocado slices. it was delicious!

Beef Tips and Noodles

this is a dish my mom used to make! i use reduced fat cream of mushroom, cut lean sirloin in tiny bite-sized pieces so it cooks faster, and bake it 350 degrees for 35 minutes covered in foil. I serve it with wheat egg noodles and it's perfect.

Chicken Enchiladas II

This was okay but it doesn't taste like enchiladas at all. I made this for some friends who were expecting a Mexican dinner, and it tasted like chicken pot pie. No one finished their small portions and ended up eating chips and salsa for dinner instead.

Warm Crab Dip II

I used half an 8 oz container of spreadable light cream cheese, light mayo, no onion, 1 can of crab, and a lot of lemon juice, salt and pepper to taste. I just microwaved the mixture for 4 minutes, stirring halfway. It came out perfect with warm (microwaved) whole wheat pita bread. So easy, and so delicious! Thank you!
