Simple and Delicious Beet Greens

This is a simple and delicious recipe. No need to blanch the greens prior to sauteing them, they cooked up perfectly straight into the pan. I added a touch more garlic than called for, and then squeezed the juice of half a lemon over the cooked down greens just before serving. It was all devoured and my son was dipping bread in the remaining pan juices while I cleaned up the kitchen.

Perfect Turkey

Made this one for Thanksgiving this year, and I have to say it is the very best turkey I have ever made. Incredibly flavorful and juicy. The only thing I did differently was to rub the bird with softened butter, some of which I stuffed under the skin of the breast meat before placing in the roasting pan. Then I covered with a generous sprinkling of herbs (thyme, rosemary, sage, and herbs de provance) and let it roast. The entire family loved it and I was complimented repeatedly. It's definitely worth the extra step of brining it.

Lemon Corn and Zucchini

I made this with canned corn and fresh zucchini, and it was delicious even with less than optimal ingredients. My guests enjoyed it too.

Homesteader Cornbread

This is THE BEST cornbread ever! Absolutely delicious, moist, tender, and my children gobble up the entire pan in one day. I admit I help them. I'm a southerner and down here we don't add sugar to traditional cornbread, but I am here to say that this is one tradition I am willing to break. This recipe is too good to squabble over tradition. I apologize to all my beloved southern kinfolk, and recommend that you try this. I guarantee y'all will like it.

Good Old Fashioned Pancakes

VERY GOOD: I used Smart Balance butter substitute instead of real butter, and reduced the salt by half, and they were still a little too salty. Definitely will use unsalted butter and still reduce the amount of salt the next time around. I also used buttermilk, instead of regular milk, which I think is a necessity for good pancakes. It's a keeper.

Asparagus Wrap

I made these for a bridal shower and everyone enjoyed them. My only suggestion is that the asparagus came out in one long strand when we bit into them, so when I make it again I will probably cut the asparagus in half, perhaps even thirds, and roll them the same, with just the tips showing out either end. That way when guests bite into them they won't pull out a long strand of asparagus from the wrap like a long spaghetti noodle. And just to note, I did blanch the asparagus prior to wrapping, so that was not the issue. But the flavor was delicious and they were all eaten during our party.
