Dinner is just hard sometimes. I try to get things together before bed, so I end up running around like a maniac forgetting to cook until my tummy rumbles and I feel like Winnie the Pooh. If only honey could cure my hunger. Must. Cook. Dinner.
I have four minions. The baby minion is now crawling around and eating solids a lot more often. We do baby led weaning. A popular choice these days. It may be a mess (a REALLY big mess), but my baby is always happy when she enjoys the flavor and texture
of food. I just have to be sure to make her something that I feel comfortable with her eating. Healthy meals are very important to me and my family. Growing up, my husband was obese. He hardly ever ate vegetables as a child and grew up in poverty. I didn't
grow up in riches either, but my mom did make us eat our veggies. Now, we make sure that our kids eat healthy and complete meals. It's not always an easy task getting these kids to love veggies without a heaping scoop of ranch, but it gets the job done. I'm
hoping these healthy habits will stay with them when they are teenagers and demolish the refrigerator in seconds.
Enough rambling! I'm off to cook some chimichangas. I make a guacamole dip and fresh salsa to go with it. It is one of my kids' favorites. Hope y'all have a blessed day. Let me know what your family favorite dishes are.
