Tea Biscuits

SO Easy SOOO Good. I didn't have any shortening so I substituted margarine (I'm sure butter would work even better). I also had a bit of cream cheese (about a tablespoon) so I threw that in as well. I added a table spoons of brown sugar and I also used whole wheat flour. Sprinkled some flax seeds on top and these babies are flaky and light and delicious! Thanks!!

Quinoa Black Bean Burgers

These tasted pretty good but they were very crumbly. Mine couldn't stand up to a burger bun so I ate them in a pita, kind of like a falafel. Over all, though, not bad.

Golden Mushroom Pork & Apples

I read the reviews and tried to doctor up this sauce a bit. I didn't have any Worcestershire sauce so I looked up a recipe and just added the ingredients: fresh ginger, LOTS dried garlic, a bit of ketchup, a few tsps of soya sauce, lemon juice, a bit of hot sauce- it turned out delicious! Just keep testing as you add them until it tastes good (obviously put the pork in last while you mix the sauce). I also used Macintosh apples, served it on basmati rice- super good.

West African Chicken Stew

This is one of my go-too-stews. Just because I normally have these in my fridge I do sweet potatoes, carrots, red pepper, onion, and and entire package of frozen spinach. I have even replaced the chicken with chickpeas and it still turned out great. This recipe freezes really nicely as well. It always makes everyone in the staff room jelous when I heat it up at work :)
