Pumpkin Fluff Dip

Libby's® Pumpkin Cranberry Bread

I have been using this recipe for a few years, and it is still my favorite. I absolutely love cinnamon, and for all you cinnamon lovers out there, I have a suggestion. Rather than put cranberries in the bread, I have put cinnamon chips in the bread. You can find cinnamon chips near the chocolate chips in the store. It is soooo good!

Luscious Spinach Artichoke Dip

I recently made the low fat version of this recipe for my Christmas party, and it was so good. I used low fat mayo, fat free cream cheese and fat free sour cream. I also could not find Romano cheese so I used Krafts Romano, Parmesan and Asiago grated cheese that you buy in the shaker. Guest raved about it! I baked it in the oven as indicated and then placed it in a small crockpot at the buffet to stay warm. For the small crockpot, I had to make twice as much to fill the pot.

Original Irish Cream

This was a hit! I took some advice from other reviews and only used a cup of Whiskey. Irish Whiskey was a bit expensive, so I used Kesslers and it was very good. I bottled the Irish Creme and gave away as Christmas gifts. This will be a new Christmas tradition. One person even admited that it tasted better than Baileys! Another idea for you dieters, I used Skim Milk instead of heavy cream. It was a lot thinner but still tasted as good. In my second batch, I could not find heavy cream at the grocery store, so I used half n half and that worked just as well.

Blarney Stone - Kissed Cookies

These cookies were fantastic - my husband and I could not stop eating them! I decided to skip the hershey kisses and, instead, covered the cookies lightly with a green mint glaze - YUM!

Chocolate Eclair Dessert

This recipe was so easy! I just made it for an office BBQ and everyone loved it. I will definitely make this again. I, too, melted the frosting for 30 - 45 minutes in the microwave and it was a lot easier to spread. I also used French Vanilla pudding which made it taste great.

Burrito Pie

This was really good. I made it for my husband last night. We both try to eat healthy low-fat meals so I made some substitutions. I used ground turkey instead of beef. I used wheat tortillas instead of white tortillas, and I used low fat mexican cheese instead of the colby. It tasted fantastic and you could't tell I made some substitutions. My husband sad it was a keeper.

Peanut Candy Bar Cake

This was really good. My husband was having 16 guys over for a poker party last weekend, and I decided to try this recipe out on them. Needless to say, the bars were gone instantly, and I have requests to make these again for the next get-together. Next time I make these, I will try to make them with chocolate cake mix.

Pecan Pie Bars I

This recipe is fantastic. I made these for Thanksgiving at my in-laws, and they were a hit. My mother-in-law asked me to make them again for Christmas. My husband, who refuses sweets to eat healthy, could not keep his hands away.

Cheesy Potato and Corn Chowder

This was incredible! I made this for my father, sister and husband, and they all loved it. I followed the recipe, except I skipped the Velveeta Mexi cheese. Instead, I added one can of Cambells Southwest Pepper Jack Cheese soup and added about 1/2 tsp chili powder. I then had shredded low fat Mexican cheese on the side so that everyone could mix their own cheese into the soup. Very good! Not too spicey but just enough to give it an after bite. I definitely recommend the Pepper Jack cheese soup.

Peppery Scalloped Potatoes

This was very good. I made this right after Christmas using leftover Heavenly Ham. I also added a little Pepper Jack cheese to give it a little kick. It was great with the Pepper Jack cheese.

Pizza Soup II

This soup was very good. I only rated it 4 stars since I added more to it based on the advice of other users. We are watching our weight so I used turkey pepperoni and italian-seasoned ground turkey. I also added red pepper, green pepper and garlic. After pouring soup into bowls, I topped it off with some garlic croutons and parmesan cheese. Very goood!

Lime Chicken Soft Tacos

Very good! I threw all the ingredients, including frozen chicken breasts, in the crock pot in the morning. When I returned from work, the chicken was so moist and fell apart on its own.

Szechwan Shrimp

I substituted chicken for the shrimp since my husband doesn't care for shrimp. I quadrupled the recipe (although tripled would have been enough)and served with steamed stir fry veggies and brown rice. It was very spicy so I will probably cut down on the red pepper next time, but my husband loved it.

Easy Slow Cooker French Dip

This was good. I cooked it in my slow cooker on high because I needed it to be done in 4 - 5 hours, rather than 7 hours. The meat was tough but edible since you dip it in the au jus. I will probably try again and cook on low next time.

Excellent. My husband said it was like his (now passed) Grandma's mac and cheese. The ultimate compliment! (I also reduced the bread crumbs and added 1/2 cup milk.)
