Apple and Spice Pork Roast

Reviewed: Nov. 11, 2012
Made this in the crockpot as others did. Will make again, but I will double sauce and then double some of the spices to taste as some suggested. Also next time I will try pork chops instead. Thanks for sharing.

Simply The Best Chicken Waldorf Salad

Reviewed: Oct. 22, 2012
What I liked the most about this salad was the cutting of calories with the yogurt and you don't miss any flavor. In fact I used more lemon juice after tasting, because I like it so much. I didn't have any grapes so subbed raisins (after all I was using dried cranberries anyway.) Still very good. So easy to make your own way. Next time I will add a little celery...I added celery seed, but still wanted a bit of celery. Also, I used the Rotisserie chicken made from this site. Thanks for the great recipe!

Caramel Apple Dip

Reviewed: Oct. 14, 2012
Made this for our Fall festival event. While I thought it was a bit too sweet, lots of others loved it... especially the kids. Kind of reminded me of sweetened condensed milk with a tangy taste. I will give it four stars because it went over so well. If I were going to make it ever again, I'd start with 1/4 cup brown sugar and work from there.

Cinnamon Coffee Frosting

Reviewed: Oct. 11, 2012
Dissolved coffee, salt and cinnamon in a tiny bit of hot water as suggested. Found the icing too sweet, but the coffee, cinnamon flavors were great. This recipe is worth adjusting, and I definitely will get it worked out for our tastes.

Peanut Butter Frosting

Reviewed: Oct. 11, 2012
This has the makings of a great frosting. I think it needs more peanut butter flavor though and a little less sugar never hurt anyone...so I will try TRindell's suggestions next time.

Famous Pork Chops

Reviewed: Oct. 7, 2012
Made these with some suggested changes... like baking without covering and adding less butter. We liked this recipe pretty good, but next time I think I will use some other seasoning besides garlic salt (even though I generally like garlic salt.) Really liked the butter crackers used as crust.

Pretzel Bread

Reviewed: Oct. 1, 2012
I first heard of Pretzel bread through Michael Symon on "The Chew." He said this was fantastic as buns for burgers. He was right. The rolls by themselves just wasn't our favorite, but buns for burgers now that's a different story. This recipe gives info for bread, rolls and chocolate rolls, but if you want to make buns...let the rolls rise again for 20 minutes and then put in the boiling solution. I only boiled my rolls or buns for 30 seconds on each side. In all fairness, we didn't try it as loaves of bread. Five stars as buns (for us.)

Perfect Baked Jerk Chicken

Reviewed: Sep. 25, 2012
Looking for something different to do with chicken. So good. I only had 4 pieces of dark meat chicken. I didn't have time to do the marinating part, so I packed it all on one side and baked as directed. I left the chicken skin side-up. We so enjoyed it this way. Will be making it again. Thank-you! Oh and we thought the spice blend was spot-on. So this gets five stars just for the spice blend alone not even counting how good it was on the chicken.

Russian Tea Cakes I

Reviewed: Sep. 23, 2012
It's wonderful to have a recipe passed down over the years. While this a fine cake/cookie... just not what I was looking for. Not quite sweet enough and a little too soft in texture for what I wanted. But thanks anyway.

Creamy Vinaigrette

Reviewed: Sep. 23, 2012
I made this with fresh lemon juice and Italian seasoning added to ingredients. Used my food processor, that made it perfectly creamy fast. I didn't drizzle oil; wasn't needed using processor. However this wasn't our favorite without adding sugar, and I wasn't shy about how much I added either. If I were going to use this in pasta salad; I wouldn't add as much. I suggest you add sugar by teaspoonfuls to taste, if desired. Will probably use a little less olive oil next time as well. With these changes will make again. Three stars as written...five stars with changes.

BBQ Chicken Pizza

Reviewed: Sep. 17, 2012
I made my own yeast pizza crust and then used my judgement as to how much of each topping to put on. I baked in a 450 oven until brown enough to suit me. I did use approx 1/4 cup pepperoncini peppers chopped finely. Left off the cilantro. Really good pizza if you use your own judgement with amounts of ingredients. I also cooked two chicken breast fillets in a little butter and seasoned with salt and pepper then cubed. Four stars as written because of excess in ingredients...five stars with these changes.

Zucchini and Potato Bake

Reviewed: Sep. 9, 2012
Liked some things about the dish, other things not so much. I thought using the olive oil was a flavorful component. I added Parmesan to bread crumbs (as some suggested) which was very good. Next time I will cut the potatoes a little smaller. I didn't think my potatoes were getting done enough so I covered with foil for about 15 minutes at the 30 minute mark. They didn't take the entire hour to cook. Probably because I covered them. When I make again, I will cut the Zucchini with less of the center on to prevent mushiness. Going to change the pepper to jalapeno without the seeds and white membranes. Also, I'm going to add croutons in place of bread crumbs and of course I will add a stronger flavored cheese of some sort again. (Feta, Asiago or Parmesan.)

Dill Pickle Meatloaf

Reviewed: Sep. 3, 2012
Thought this was tasty. I added 1/3 cup chopped pickle to the glaze instead of the 1/4 cup, because I like pickle so much. Thought it was a bit on the wet side too. I drained any liquid off half way through. Thanks for sharing. Will put in my meatloaf recipes to make again sometime.

Curried Coconut Chicken

Reviewed: Sep. 2, 2012
While this was a good dish, it wasn't a home run for me. My husband liked it a lot though. I would give it three stars and he would give it 5 stars...so I'll split the difference with 4.

Butterscotch Sauce II

Reviewed: Aug. 31, 2012
Not as buttery tasting as I was looking for, the flavor got lost on vanilla icecream. Even tried adding another tb. butter. Update: Adding a touch of butter flavoring helps with this recipe. I used a combo of brown sugar, white sugar and syrup to make a better color and then followed the recipe as usual. Adding a drop or two of yellow food coloring makes it prettier if you do this. But that's up to you. Remember brown sugar muddles the color but adds richer flavor. However, just adding the butter flavoring helped the most.

Hasty Chocolate Pudding

Reviewed: Aug. 29, 2012
Am I dreaming? Talk about a short-cut with good results. Will use this to make chocolate pie at holidays. I'm all for time-savers, but when you get a good product to boot...I'm in. Thank-you Debra. I added a pinch of salt to dry mix and a tb. butter at the end, Can make "milk chocolate" by adding less cocoa. I gave 4 stars due to bitterness. The higher fat content of the milk...the creamier the results. Tip: Make up baggies of dry mix while you have everything out for convenience sake.
