Butterfly Chili Lime Prawn Spedini with Raspberry Dipping Sauce

I only marinated mine for 15 minutes so as not to become tough because after that the cooking process will begin in the marinade before it even makes it to the oven. The shrimp picked up all the good flavors in that amount of time. Also, I added a bit more sugar and vinegar to the sauce according to our liking. I didn't discard liquid. You may want to remove white membrane inside pepper if you don't like so much heat. A few things to work out yet an over-all good dish, but preferably with these changes (for us.)

SWEET, Sweet Potato Fries

These have a good flavor. I only used a good sized sweet potato and that was just right for the spice mix. I think it depends on the different sizes of potatoes. I didn't put salt in the mix...just sprinkled with kosher salt before baking according to what I thought was the right amount. My oven only took 25 min. depends on your oven. I'm wondering if deep frying and then baking a few minutes in the spice mix would make a more sturdy fry. Worth a shot because they are tasty but very soft.

Beef Tamales

Some friends from Mexico several years back, came to our house and taught us to make their families' recipe for tamales. They took great pride in the making of them. We spent most of the entire day in the process; there were plenty for freezing and enjoying later. This recipe is very close but I like more liquid than called for (just makes easier spreading.)

Peking Duck

This dish was very tasty, but next time I will use a vertical poultry roaster to get a crispier skin. I will also put in some water in the bottom of my roaster before roasting because my pan was a mess trying to clean afterward. I let the duck hang overnight in a cool room to dry. My Husband and I made this together and really enjoyed making it. I used orange marmalade with the red plum jam which was extremely good. We loved the finished look.

Lemon Artichoke Soup

We felt this soup just needed the juice of half a lemon. You may prefer more but I suggest tasting before adding the other half. With that being said, my goodness what an unexpected treat! I'm going to leave ingredients partly whole next time without blending all. However for a dinner starter soup, I would blend and garnish...also strain it as another reviewer mentioned.

Roast Leg of Lamb with Rosemary

The flavor was very good. If you have a temperature probe, you'll be better off. I paired this with the "Roasted Rosemary Potatoes." The two dishes went hand and hand.

Easy Chocolate Truffles

I made this with just condensed milk as others suggested. I scaled down to a very small size to try out and was sort of in the dark with the milk measurements, but it worked out nicely. I dipped mine in melted chocolate after set and rolled in goodies.

Butterscotch Potato Chip Cookies

One of my friends made these for me growing up and I really liked the salt and sweet combination. I used half shortening and butter and also added pecans. You can add less butterscotch morsels to your liking and replace with nuts.

Quick and Easy Taco Dip

This was a good base to start, but I think people will adjust this a lot according to their own tastes...some like it spicy and some like it mild. I adjusted with more taco seasoning and salsa. Lots of options, but an easy fix.

Chocolate Brownies

Everyone that tasted these absolutely loved them. More sugar as some suggested may be desired (these are less sweet but very good.) I liked the addition of peanut butter. I changed to 30 servings and baked in a glass pan for about 27 minutes (depends on your oven.)

Oven Roasted Trout with Lemon Dill Stuffing

I cooked the stuffing under trout fillets, but followed the seasoning mix for stuffing exactly. We enjoyed this dish, however after tasting I sprinkled on a bit of lemon pepper seasoning (personal preference.)
