Amazing Whole Wheat Pizza Crust

Reviewed: Nov. 14, 2012
really good and really easy. Followed the recipe as written, minus the suggestion from others to do 3 and 1/4 cups whole wheat flour (I actally did white whole wheat flour). I think next time I will add a touch more oil, salt and sugar. I made two thin pizzas. I think next time I will leave as a whole to make one thicker crust pizza. Next time I will use less cornmeal on the bottom of the pan. I let it rise an hour the first time, and then an hour the second time. I think this would be good to turn into breadsicks and add in some herbs to the dough.

Butternut Squash Bisque

Reviewed: Jan. 9, 2012
Fantastic! Read others reviews first and added a whole sliced golden delicious apple (with the peel) with the carrots. Used two butternut squashes and probably double the carrots it called for (I was doubling and then adding more). Used chicken stock, added minced garlic, ginger and fat free half and half in place of cream. loved it. will definitely make again.

Flatlander Chili

Reviewed: Oct. 28, 2011
fantastic! i used 1 can chili beans, 1 can red beans, 1 can great northern beans, and 2 cans of black beans and then followed others suggestions to use tomato sauce (instead of juice) and petite diced tomatoes (instead of sauce). Towards the end, I realized that it did need more liquid so I added about 30 oz. of V8 juice for health reasons and flavor. I omitted the green pepper because I didn't have any but added some sauteed shredded carrots. Delicious!

Easy and Delicious Chicken

Reviewed: Jul. 25, 2011
Fantastic! After reading other reviews, I cut down the italian dressing to 6 oz, used a full can of chicken broth, fat free cream cheese, reduced fat cream of chicken soup, fat free chicken broth, and omitted the salt and pepper (enough sodium already with the broth and soup). I poured everything (well mixed of course) over the frozen chicken breasts in the crockpot. Throw and go dinners are my favorite. Served with brown rice and steamed green beans. Will definitely make it again!!

Turkey Burgers

Reviewed: Jun. 18, 2011
FANTASTIC!!! Made these tonight and we loved them!! Like other reviewers-- kept everything as is but omitted the salt and pepper (the onion soup mix had everything and more). Also added two small handfuls of Italian breadcrumbs. I used extra lean ground turkey and served on whole wheat hamburger buns with fat free miracle whip, honey mustard, ketchup, tomatoes, red leaf lettuce, caramelized onions and grilled red peppers. YUMMMMY! Thanks a bunch!!

Apricot Chicken

Reviewed: Jun. 6, 2011
Excellent! My husband and I devoured this! So yummy served on brown rice! Here are the changes I made to suit our preferences (to make it a bit healthier): used no sugar added apricot preserves, omitted the chicken broth/sherry, used extra virgin olive oil instead of vegetable oil, and added a ton of veggies (peppers, onions, carrots, green beans, water chestnuts, snap peas. The cashews in this dish really make it amazing. The sauce is so simple yet superb. Thanks for a keeper!

Whole Grain Pancakes

Reviewed: Jun. 5, 2011
YUMMMMMMY. Let me start by saying I made these twice in one week. Wow. Soo good. I love that there is only whole wheat flour in this recipe and no white flour. Love the cornmeal and oats. The first time I made this, I planned on topping my pancakes with syrup and lots of toppings (berries, nuts, etc.), but I just ate it with syrup (sugar free) and completely forgot about the toppings because they were that good. I didn't change a thing to the existing ingredients (except to triple it because I wanted to make more and have it last for 2 days), but I did add a few things to mine: a few tablespoons of applesauce (there is no oil in this recipe which I liked, but there needs to be some oil substitute), and 3 tsp of vanilla, a dash of salt, and some cinnamon (to taste). Loved loved loved it. Cannot say enough good things about it. A very healthy, filling, and tasty breakfast! Oh and I agree with other reviewers that letting the batter sit after mixing is key. After stirring I let it rest for approx 15 minutes and it was perfect! Thanks for the recipe! It is now our favorite pancake recipe!

Zucchini Summer Pasta

Reviewed: May 23, 2011
Excellent! I used a quart of tomatoes that I canned last summer in place of the crushed tomatoes, omitted the butter and olive oil (the jar of tomatoes had plenty of liquid). I also substituted whole wheat linguine instead of angel hair pasta (sounded better to me). I added Italian seasonings. Hit the spot!

Quick Creamy Spinach and Tomato Pasta

Reviewed: May 11, 2011
Fantastic! I made the following changes: 16 oz of wheat pasta (doubled), about 2 pints halved cherry tomatoes (instead of canned), 3/4 cup fat free sour cream (instead of 1/2 cup), 2 tablespoons of pesto (instead of 1), and then added steamed fresh broccoli (about 3 cups), sauteed onions, Parmesan cheese, minced garlic, Italian seasonings and pine nuts. Healthy and delicious!! :) Husband loved it! I think the broccoli really made it. Thanks for the recipe! A nice change from regular spaghetti.
