I'm a stay-at-home mom that takes care of two beautiful children. My husband is a hard worker and I fill my time with cooking fun dishes for dinner with a lot of variety!

Anything Mexican...my Mexican cooking is very much Americanized, but everyone loves it, usually.

Turkey at thanksgiving...Mom handed down her secrets to me and I love to use them!
My cooking triumphs
Anything that requires a rolling pin. I am so novice at that...but I managed to bake my first apple pie from an old family recipe a few months ago and hubby was very impressed..though I was nervous as heck to do it!
My cooking tragedies
Making fish tacos for the first time...aye, back to the drawing board!

Slow Cooker Chicken Taco Soup
Excellent! I was so proud of myself for pulling this off with just throwing together stuff that I already had on hand. I did use left over roast chicken instead, omitted one can of the Rotel tomatoes w/chilies, replaced beer with 1 14oz can of chicken broth and replaced black beans with pinto beans. I also threw in 2 T. of my Garlic Garlic seasoning (from Tastefully Simple). Instead of the crock pot, I sauteed my onions in my dutch oven for about 8 minutes on medium, then added remaining ingredients...kept on low for 4 hours on the stove and it was PERFECT. The sour cream/cheese/crumbled tortilla chips on top is the perfect compliment. Everyone in the house loved it...even my picky kids...AND PICKY HUBBY!!!

My Country Style Steak
To say that this was a hit at my house would be an understatement. Comments were, "this is the best gravy I've ever had!", "Honey, you hit a HOME RUN!" from the husband and kids, in fact they are fighting over the leftovers as I'm writing this. I did modify a bit: kept steaks whole, added garlic powder and Montreal seasoning to the flour before drudging meat through it. Also, to keep the gravy thicker, I added 1 cup of milk and only 1/2 cup of water and it was perfect. Highly recommend.

Sea Bass Barbecue
Definitely a keeper...easy and quick, this is the perfect compliment to Sea Bass. We added a little Old Bay Seasoning to perk it up a bit and that was an excellent addition. Will use this again without hesitation! Also a great way to lightly season fish for other uses like fish tacos, etc.
