Artichoke Chicken

I followed Jim F's advice and sauteed onion and mushrooms in butter, a pinch of red pepper flake, and garlic, spinach on bottom followed by seared chicken breast, topped with onion/mushroom mix, marinated artichoke (which I chopped fine), then sprinkled with cooked and chopped bacon (per DH's opinion)..then I topped with mayo/parm mix and some italian breadcrumbs. They loved it (can't speak for myself as I am vegetarian) but they have very good taste. Thank you for the recipe :) This one is a keeper!

Easy Meatloaf

This was a great base recipe. Using two pounds of g.b., I did what others suggested with the worcestershire, sauteed onions and a red bell pepper in lots of butter with garlic. I was out of milk, so I used a bit under a cup of chicken broth instead and added another egg to make up for the milk. I also added 4 pieces of cooked, chopped bacon. A dash of nutmeg to the topping. My guys liked it...being vegetarian, I didn't try it, but if my men like it I know it must be good. Will be keeping this one :) Thank you for sharing! Also, I formed a loaf on a sheet (makes for easy removal of grease) and cooked at 350 for about half an hour, and another half hour at 365, let sit for about 10 minutes before serving.

Spanish Rice

This was a good jumping off recipe where flavors are concerned. What interested me the most was the method of cooking the rice. I used veggie broth, added much more seasonings, substituted 2 cans of mild green chili for the green pepper and instead of tomatoes I used tomato sauce. Perhaps these changes had something to do with the fact that it took the 15 minute cook/15 minute rest twice before my rice was cooked through? I had the rice for breakfast this morning and it was delicious again :) Thank you.

Simple Crustless Spinach and Mushroom Quiche

I bet it's awesome as is, but I had to alter...only added 1c sour cream (all I had) and about a quarter cup half n half, didn't have spinach either but added green onion. Sauteed mushrooms in a bit of truffle oil with the butter. Also, mine cooked at 350 for 35 minutes, then I shut oven off and continued to cook for another 12 minutes...perfect :) Husband and I both really liked it :) Thank you for submitting a very nice recipe!

Sweet and Sour Sauce I

The Best Chicken Fried Steak

Made this tonight, it had good reviews. I am vegetarian, so I didn't try it, but my meat eating people liked it. The only things I did differently was for the flour mix I added extra garlic and some Red Robin seasoning...I reserved the remaining flour mix for my gravy instead of plain flour, and I added some sausage drippings. Thank you for posting this, I am sure it will be a regular for our Sunday breakfast!

Spanish Rice

Great basic recipe to which I added the following tweaks: I sauté'd the garlic, onion, celery and green pepper in olive oil, omitted the tomatoes, rather after cooking my brown rice in veggie broth (I'm vegetarian) I added about a quarter cup of tomato sauce. Mixed them together with the rice and added extra chili powder and some cumin. Very good! Thank you for the great recipe :)

Creamy Mushroom Pasta

Sautee'd 3 X mushrooms with fresh garlic and minced shallot, added the wine with veggie broth (I'm vegetarian) and two buck Chuck. Added some dried sage for a gravy type taste and it was a big hit over farfalle pasta. Thank You

Cheesy Ham and Hash Brown Casserole

My husband makes this for Sunday breakfast regularly. It's my absolute favorite breakfast casserole ever. We don't add meat becuase I'm vegetarian, but otherwise he makes it 'as is' and it's delicious :) Thanks for sharing this recipe.

White Sauce for Pasta

Just made this and it was delish. I used real butter, made a roux with the flour and added lemon juice and some mushrooms I sauteed with shallot and garlic in butter. I topped mine off with extra sharp white cheddar. Great recipe.

Creamy Banana Bread

I've made so many different banana breads over the years, but this recipe has replaced all the others. Made according to the recipe (doubling the topping) this is the perfect banana bread. I've had so many requests for this bread! It never lasts more than a day (and I make two batches). Thanks so much for a wonderful banana bread recipe!

Stuffed Strawberries

Though I didn't eat any, I did get good reviews from my family for this treat. The only negative I would have for it would be they get messy on the plate very quickly. Otherwise, people ate them up and loved them. I made with vanilla instead of liquor...this may have been a mistake (and it's why I still gave 5 star!) They looked beautiful, as well. (until they got messy!) I topped with shredded chocolate bar and lots of people liked that. Thank you for a simple, pretty presentation of sweets!

Vegetarian Tortilla Soup

Florentine Artichoke Dip

I made this for a family gathering on Thanksgiving and everyone loved it! I didn't have any lemon juice, but it still turned out delicious. I warmed it up the next day and wrapped a scoop in some wheat pita bread, it was excellent!

Brown Sugar Meatloaf

Best Marinara Sauce Yet

This is an excellent recipe. I've always wanted to make my own spagetti sauce but always assumed it would be too much trouble. Recently I've been buying organic spagetti sauce and I love it, but this was even better! I made the marinara to accompany another recipe from this site, baked ziti, and my husband and son could not get enough. The only alteration to ingredients I used was a little brown sugar added to the sauce during simmer time. I also simmered for a bit longer and it turned out so yummy! I'm sure I won't go back to store-bought marinara with this recipe in my book! Thanks Jackie, for a wonderful sauce!

Sour Cream Coffee Cake III

A great coffee cake recipe. Simple enough, quick, and 100% gone in under a day. My husband, son, and I made ourselves sick because we couldn't stop eating this cake. Delicious, moist, and just sweet enough. I made only two modifications: double called-for topping (I like lots) and a bit longer cooking time for 9X13. I believe it took about 50-55 minutes. This is a dangerous item to have available, as I have no self control, so I'll make it when I've got lots of company to impress. Thank you for this cake recipe Jan, it's super!

Aussie Chicken

I made this as directed with only a couple changes, I sauteed the mushrooms and some fresh onion, and browned the chicken breast in the bacon grease. Though I didn't try it myself (vegetarian) my company and family loved it. My husband is generally not fond of chicken, but he said he'd like to have it again. Thank you for this, it was a winner recipe that I'll make for guests again, it's simple but a big pleaser!
