Cherry Tomato Corn Salad

This salad is delicious! I love all the ingredients. In the end I did end up adding more lime than the recipe called for but mostly just because I did not know what to do with the rest of the lime.

Chicken Vegetable Medley

When I made this I thought I still had some bell peppers but turns out I did not, so I made the recipe without it. It was DELICIOUS! Even my man (who is a picky eater) really liked it. Lots of great healthy veggies. I will definitely make this again.

Mystery Chocolate Cake

I made this for my fiance who is a very picky eater. He loved it! He shared it with his contruction co-workers during lunch and they all loved it too. He still does not know what the secret ingredient is nor does he really want to. I made it becasue my friends brought me a lot of beet roots from their garden and I did not know what to do with them. As if beet cake was not healthy enough I also substituted half of the oil for apple sauce. This cake was very moist and delicious. I am making it again and this time will put some icing on it.

Creamy Frosting

Lots of work (with all the mixing) but very delicious. I have made it twice and the way it turns out depends very much on the ingretients used: 1) whole milk instead of skim 2) real butter instead of substitutes and 3) finer grained sugar is best. Goes super with the Mystery Chocolate Cake on this site.

Cranberry Squares

DELICIOUS!!! I followed the recipe exactly and it turned out great. All I had was a can of cranberries left so I did not measure how many cups exactly but the can loooked like it was about 2 cups. Besides, I love cranberries! I did bake it in a smaller round dish and so it turned out a bit thicker. Very moist but still a crumbly crust... perfect texture. This was my first time making crumblies and I think the secret was to just put my hands directly in the dough. It did get trickier once the egg was added but it still came out great. Will definitely be making this again.

Fiesta Fry Pan Dinner

This recipe was OK. The taco seasoning gives it that Mexican flavor. I found and made this recipe because I was looking to use up my zucchini but I must say that I think the other reviewers are right in saying that it can be left out and beans would be better in its place. Nonetheless a great way to sneak in vegetables for picky kids or husbands. =)

Pear Coffee Cake

This cake was the best! It is my new favorite. I changed the recipe up a bit since I did not have all the ingredients. I did not have any pecans or dates so I just omitted these. I also used just ½ cup of oil and substituted the rest (1 cup) with apple sauce to make it a tad bit healthier. The coconut flakes were very fine since that is what I had and I only used 1 cup. I also made it in a bread pan but it took 2 because there was so much batter. It turned out so good. Both the cakes were gone by the next day.

Tortilla and Bean Soup

I made this with a bean blend (all sorts of beans mixed together) that mom had in the food pantry. I just let the beans soak about 5-6 hours and then made this recipe. It was fast, easy, and delicious.

Artichoke and Sun-Dried Tomato Chicken

Delicious! Only thing I did different was cut the chicken pieces smaller and add garlic powder. I served it over Rottini pasta and served a delicious dinner to the family which I will be making again.

Bread Pudding II

Vegan Split Pea Soup I

Overall this was pretty good. I have some barley and was looking for a recipe to use it up. I made this without the celery since I am not a huge fan. I also only had a little more than 1/2 a cup of split peas so that is all I put in. I did add a little extra barley though since I had plenty. After an hour of simmering the soup started to burn at the bottom so I had to add some more water (only a cup though... I'm a little sad I did not read the reviews ahead this time). It looked like the split peas and barley were done though, so I added the carrots and just 1 potato thinking they may not get fully cooked without the rest of the soup burning. And I was right. I used only 1/2 teaspoon of parsley because I only had dried and that was enough.I think I may try this again but definitely with MORE WATER.

Basic Crepes

Absolutely LOVED. I did mix the wet ingredients first and then added the flour last. I also added 2 tablespoons of powdered sugar since I know I was going to use these as dessert crapes. I'm from Europe and this is exactly the way my mom makes it. DELICIOUS!!! Also this amount made about 6 or 7 crapes so if you are making this for more people I suggest doubling the ingredients. It stores well in the fridge or freezer between wax paper.

Roasted Beets with Feta

Basic Cheese Polenta

I must admit, polenta is not my favorite but my husband is Romanian (where polenta is a staple meal) and so I make it for him. I made this recipe exactly as stated and it was too salty. He likes his food pretty salty but even he stated that it is a lttle oversalted. He ate it and liked it none the less.

Slow Cooker Chicken Marrakesh

Did not have any turmeric so did without. Also Substituted one of the sweet potatoes for a regular one. Overall pretty good meal. My husband who is a picky eater, and not one to try many new things, liked it.
