Blueberry Gingerbread

You gotta put ice cream on top. I didn't add molasses to the recipe and it turned out fine. Very yum.

Blueberry Breakfast Sauce

I halved the recipe and it was great for 2 smalls and 2 adults. I mixed the sugar and cornstarch together and added the water and then added the blueberries and set it to low heat while I made the pancakes. When it was go time I turned it up slightly to get it to boil and be ready. I did stir every once in a while while cooking the pancakes and then consistently while it boiled.

Autumn Muffins

These are delicious. I used less ginger, cause I don't really like it much, and didn't use figs cause I didn't have them. Some sliced almonds, as I had them handy. Oh and I used a little applesauce (1/4 cup) to top off the butter. Delicious.

Classic Bran Muffins

Pretty close to my grandmother's recipe. I add diced pieces of fresh cherries to mine instead of raisins. I also made the dough (being careful to not stir too much) the night before we ate it, covered and left in fridge.

Herbed Greek Roasted Potatoes with Feta Cheese

I was running shy on time and wasn't able to bake these for as long as the recipe says. I did enjoy the tang of lemon these had, which was surprising because I don't like lemon in foods. My potatoes were still soggy at 60 minutes of cooking, but I may try again, making sure they are all single file and not bunched up in the pan.

Breaded Chicken Fingers

I didn't make this as written. I needed more spice to my basic panko coated chicken, so I used the coating and baked them dotted with some butter. It needed more butter than I used because the chicken fingers came out with dry flour spots. While I would use the spices in this recipe again, perhaps doubled, I would not use flour in my breading.

Buttery Rolls

These rolls really are great. I had to scold my husband to not eat them twice, once before supper while they were cooling and during mealtime when the rolls were supposed to be an accompaniment, not the main dish. I put half of the recipe in an oiled bag into the fridge to have for supper today, if I don't write back, it turned out great. Am letting rest at room temp for an hour before I bake them off. These rolls are really worth the minimal time they take to make. Impressive. Oh, I will say in my toaster oven they took 11 minutes to brown nicely.

Traditional Macaroni and Cheese

I used whole milk for this and when I ran out of cheddar - I used mozza and parmesan. It was edible but next time, old cheddar is a must. Otherwise the technique and rest is great. I also toasted up some cubed bread with melted butter overtop for a bit of diversity.

Creamy Chicken and Wild Rice Soup

I used pre-cooked chicken, which I browned up with some celery and onion in a small pot, in some butter. Then I cooked some potatoes in the chicken broth (bouillon & water, really), diced bite size, for about 10 minutes. Made a roux with 1/3 cup flour and 1/4 cup butter. Used homogenized milk instead of cream. Didn't use the rice. Added couple cloves of minced garlic. Chopped and added some cooked bacon. And we dunked bread in it too. Next time I may cut back on adding the 2 cups of water, because it may have been not thick enough (with the roux amount I made).

Sour Cream Cheesy Potatoes

Italian Spaghetti Sauce with Meatballs

Great meatballs. I didn't use the sauce but instead added a honey garlic sauce to them after I baked them. I didn't have bread crumbs so I made some out of fresh hot dog buns. I also added fresh garlic and a few tablespoons of full fat milk. Baked on parchment in my toaster oven at 300 degrees for 30 minutes, then added to the honey garlic rib sauce I was simmering on the stove, just for about 5 minutes. Served with homemade mac & cheese and sliced cucumbers.

Oven-Fried Pork Chops

I didn't have bread crumbs, so I used Stove Top stuffing that I crushed up. I also cooked them in my toaster oven. They were very juicy, and the 10 minutes per side was perfect for the thick chops I had to register them fully cooked inside (meat thermometer always!)

Honey Glazed Ham

The ham was moist, but I don't think the flavor was imparted very much. The flavor was nice, but it didn't absorb into the ham that we could taste. Otherwise it tastes fine, and I'm not sure its the recipes fault, maybe I'm just meant to drizzle the liquid over the meat when we are eating for the flavor, which we did after I thickened it. Not a bad recipe, just not something you think about and crave.

Easy Swedish Apple Pie

It tastes better when cold. It must be refrigerated because of the egg though so be careful. Wasn't as good as my apple crumble so I don't think I'll make it again.
